Universal, Populist Turkey and Thanksgiving
It has not always been easy to be a turkey in America. "In our beginnings as a nation, there was a big argument about what should be the great American symbol," according to Hum Rosen Professor of Folklore and Folklife Roger D. Abrahams. The choices seesawed between the bald eagle and the turkey. According to turkey legend, Benjamin Franklin advocated for the turkey as the national symbol. But the turkey lostat least temporarily. The turkey-as-symbol slipped into oblivion for decades before finding a new niche in American life. "After the Civil War, Abraham Lincoln and Sarah Josepha Hale, editor of the major women's magazine in the 19th century, were desperately seeking a holiday that would bring the nation together. Thanksgiving had been a local holiday in some places in New England," explained Dr. Abrahams. "Lincoln declared it a national holiday two centuries after the original Thanksgiving." And, with it, the turkey regained respect and visibility. Since its inception, Thanksgiving Day has never lost its place in the national repertory of celebrations for two main reasons: It is simultaneously a non-religious, inclusive holiday, and it is an autumn harvesting feast.

'What's Cooking?' for Thanksgiving Movie about ethnic family celebrations has SouthCoast parallels

Thanksgiving usually boils down to this: We get together with our families to commemorate the pilgrim ancestors, we eat too much, we feel sleepy after the meal, and we have lots of turkey leftovers the next day. It is a uniquely American tradition, the only time, according to the French, that we eat well in this country. The Thanksgiving meal is quite elaborate and takes a long time to prepare.
"What's Cooking?," a new movie opening Friday, explores Thanksgiving in four different ethnic households in Los Angeles. The movie could have been made in New Bedford or in Fall River, where waves of immigrants from Portugal, Cape Verde, the Caribbean and Cambodia, among other nations, have made Thanksgiving their own.
In "What's Cooking?," the Seeligs are old-fashioned Jewish parents welcoming home their daughter and her "room mate." A rich and successful African-American family, the Williams, must cope with the arrival of Mr. Williams' meddling mother. The Avilas are a Latino family from Mexico; Mrs. Avila is newly single and ready to begin her life again, away from her philandering husband. In the Nguyen family, from Vietnam, the fiercely proud Mrs. Nguyen is worried that America is changing her children and that she can no longer understand them.
Gurinder Chadha, the director of "What's Cooking?," knows a thing or two about multiculturalism. She is a Kenyan-born English woman of Indian descent. Her previous movie was "Bhaji on the Beach" (1994), a comedy about a group of Indian women in England who organize a bus outing from Birmingham to the seaside resort town of Blackpool.

I recently lost weight, and these recipes gave me great options while I was losing weight, and there's great stuff in here to help me keep it off. My husband is not into healthy cooking/eating to the degree I am (he's still a meat-and-potatoes kind of guy), but he loves most of the meals I've cooked from here. Each month, there is a featured item, such as crawfish, mushrooms or an ethnic cuisine. This feature not only includes information regarding the particular item, but numerous recipes as well. But the feature is only a small part of the recipes included. Each month also has a section where they've taken a full fat item (often a dessert) and toned it down, as well as a quick cooking section.

Fusion Cuisine: Cooking Without Boundaries America, the melting pot of cultures, is fast becoming the melting pot of cuisines, too. In continuing to satisfy their customers' demands for variety, chefs nationwide are blending together indigenous ingredients from different cultures in a culinary trend known as fusion cuisine.
"Fusion cuisine is when you combine particular ethnic cuisines and fuse them into one," said Keith Coughenour, executive chef and captain of this year's Culinary Olympics Team USA. "The combination has to make sense, be compatible and, ultimately, taste good."
In this "East meets West cooking," the ingredients, flavors and techniques of different cultures are pulled together to create unique, flavorful dishes. For example, Pacific Rim cooking combines Asian and Western styles. Another popular combination is French and Vietnamese.
When mixing ethnic cuisines, it's important to consider the flavor of the ingredients. Coughenour suggests starting with products that overlap both of the cuisines being fused, such as cilantro and hot peppers, which are both used in Asian and Mexican cuisines. "Once you find a similar starting point, you can expand the flavor by adding ingredients specific to each cuisine," said Sherrie Rosenblatt, director of public relations for the National Turkey Federation. "It helps to use a versatile base like turkey, whose mild flavor takes on seasonings easily."
While most chefs are embracing this concept, many classically trained chefs are concerned that the blending of ingredients that naturally work well together is being sacrificed in the pursuit of preparing different and exotic dishes. Coughenour uses the example of young chefs just out of culinary school. "They're limited in their knowledge of regional and ethical cuisines and often put together ingredients that don't make sense."

To plan for leftovers, calculate one pound of turkey for every three cups of diced meat, or four to six servings. Why not try stuffing with chili and cilantro. Using tamales in stuffing accentuated with black olives, beans, corn and a spicy Mexican cheese is an idea.
    How about Turkey Asian style with a soy sauce glaze. You could even add a little honey to the glaze. Another idea for a glaze could be made of honey, molasses and ginger. Pumpkin puree or a sweet potato puree might be nice additions to the stuffing. The se items would also be lovely as side dishes. I would also recommend that even if you try an ethnic slant on Thanksgiving that you still offer traditional items too.
    An Asian of Thai twist on Thanksgiving would be very nice. For Chinese-style make a glaze of orange marmalade and ginger. You could make little pancakes Moo Shi-style to wrap up your sliced turkey. Bok choy would be a great side dish. Try a rice pudding with shitake mushrooms and lemongrass seasoning.
