BORSHCH
Borshch is the quintessential Ukrainian dish; it's not only the most popular dish in all Ukraine, it's uniquely Ukrainian. Other Slavic cultures and nations may have adopted borshch, but it originated in Ukraine. Borshch is a mildly tart vegetable soup in which beets predominate. Generally, borshch contains many different ingredients, as many as 20, but the combinations and proportions vary according to region of Ukraine, the season, and family tradition. There are even more variations of borshch than political parties and movements in Ukraine. Some say that a true Ukrainian borshch contains beans, either fresh or dried, but Ukrainian individualism being what it is, there are undoubtedly many other opinions on what constitutes a true borshch. Borshch is usually made from a base of rich meat stock. Pieces of meat, usually pork, may be cooked in the soup along with the vegetables, but there are meatless versions and these are especially served on fasting days. The tart flavor may come from any one of the following: beet kvas (fermented beet juice), lemon juice, strained rhubarb juice, sorrel leaves, vinegar, or pickle brine. Besides having a slightly tart flavor, borshch also tastes of salt, pepper, dill, and garlic, according to the discretion of the cook. A good borshch should retain its deep red color; the ingredients should not be cooked to a mush, but should retain their texture. One way to guarantee this is to bake the beets in the oven until they are tender, remove their skins, chop them, and then add to the soup near the end of the cooking.

  • Varenyky (or pyrohy or perogies) are dough pockets filled with potato, or potato and cheddar cheese,or kapusta (sauerkraut), or cottage cheese, or blueberries, or cherries, or ... Ukrainian varenyky are boiled and resemble to various degrees Polish pierogi, Russian pilmeni, Italian ravioli,Jewish kreplach, or Chinese wonton. Varenyky are very are often served with onions and sour cream. Mmmmm. The word "varenyky" is used throughout Ukraine.The singular form of "varenyky" is "varenyk." Betcha' can't have just one! The word "pyrohy" is used by Ukrainian American and Ukrainian Canadian descendents of pre World War I settlers from Western Ukraine. The singular form of "pyrohy" is "pyrih." The word "perogies" is a Canadianization/Americanization of "pyrohy." Holubtsi are Ukrainian cabbage rolls. The filling is mainly rice with a small amount of hamburger (unlike other East European cabbage rolls which are mainly hamburger with a small amount of rice). Cabbage leaves are steamed to make them soft and then the filling is added. The holubtsi are placed in a large pot, covered with tomato soup (or sauce) and baked.The word "holub" in Ukrainian means "dove," and holubtsi are in the shape of a dove. Borshch is Ukrainian beet soup. Other spellings for "borshch" are "borsch" or "borscht." We prefer "borshch" which would be the official Library of Congress transliteration of the Ukrainian word.

Pimsleur won't get you very far, is expensive as hell, and is somewhat cumbersome to work with. So the rest of this review will be about how in hell did I get to giving it five stars. There are several ways to go about when wanting to learn a language in an audio-only manner. You can get the "Learn in your car" from Penton Overseas. You can get the audio-only course from Living Language. Or you can take Pimsleur. From the lot, Pimsleur would be the ONLY decent answer for the utter beginner, with the other options, you will find yourself replaying the tapes a couple of times. Does any language course that is a self learning course worth this kind of money? No. That's why we have the next paragraph. Money. First of all, by all means get it used. It is an audio course that I recommend going through only once. So if you're lucky enough to find a CD version used, it will be exactly the same (of course - assuming that the seller is decent enough to sell unscratched CD-s). As for used audio cassettes, well, as much as we want to hear the correct pronounciation, we have to remember - this is not Mozart, it is only recorded speech. However even if you don't find it used, you can buy it, and after completing the course, sell it as used. As this is suitable for first time learning, and is too much for review purposes (perhaps the other audio-only courses will be better for review).

But Christianity in the 19th-century Ukraine, the focus of Ukrainian-born Farley's well-researched book, coexisted with a rural paganism in which ancestors were appeased and fed at Christmas, river spirits blessed and, in a typical grace, God appeared simply as prima inter pares : "Gracious Lord, sun of truth, stars of beauty, moon of light, wind ferocious, rain bountiful, weather beautiful, ancestors' fathers, we feast with you and greet you in summer."
