The Good Nutrition Guide
Vegetarianism is a healthy option but it is very important to have a well-balanced diet. You could stuff your face with chips and chocolate at every meal and be a vegetarian but you wouldn't be doing your health any favours and it wouldn't help the image of vegetarians either! having said that, you don't have to eat salads all the time either - so don't panic!
Basic Stuff
A varied vegetarian diet will supply all the essential nutrients you need to be fit and healthy - despite what anyone else may say! In fact, you should be healthier than the average meat-eater. There are four main groups of food within a vegetarian diet: fruit and vegetables; beans and pulses; grains (ie rice and breads); and nuts and seeds. In addition there are also dairy products or dairy alternatives like soya milk. You won't go far wrong if you try to include something from each of these food groups every day in what you eat. Don't worry if you miss out on one now and then - just try to eat from the main food groups as often as you can. Don't try to force yourself to eat things you hate. If your only experience of vegetables is a smelly cauliflower which has been boiled for three hours then you've got some serious catching up to do! Try some new vegetables (sweet potato, aubergine, pumpkin etc) and try eating the vegetables in a sauce or soup. If you still hate the idea, find other foods which contain the same vitamins and minerals that you will need.

Beastly Ingredients to Avoid
As a vegetarian, it's simple to avoid eating lumps of meat or fish, but it's not always so easy to spot the hidden extras - the ingredients from dead animals which are added to foods. Lots more ingredients, while not made from dead animals, are pretty dodgy in other ways.
Here are some common items to watch out for and avoid!
Animal Fat
When 'animal fat' is listed as an ingredient it means 'fat from a dead animal' and not a dairy product, so avoid it. Cakes, biscuits and margarines often contain animal fats and are not suitable for veggies. Suet, lard and dripping are all animal fat - although you can buy vegetarian suet from most supermarkets these days.
Albumen
Made from egg white (almost definitely battery eggs) and used as a food binder.
Cheese
Unless cheese is labelled 'vegetarian' you can assume it contains animal rennet which is taken from dead calves' stomachs. All major supermarkets sell vegetarian cheese these days. Beware of processed or ready-prepared foods which contain cheese - unless they have the V symbol, they won't be vegetarian.

VEGETARIANISM
Vegetarian diets may create a need for adjusting guidelines on the Food Guide Pyramid . However, choosing to follow vegetarian diets can be a very healthy choice. Sometimes people may feel that following vegetarian diets will create difficulties in receiving all the nutrients that are important to maintain health. The main nutrient that people are concerned about is protein. Yet, with careful planning, one can receive adequate amounts of all nutrients, including protein. In addition, vegetarianism can include many different styles of eating because of the many different types of vegetarian diets. There are numerous types of vegetarians, but the three most popular styles of vegetarianism include lacto-ovo-vegetarians, lacto-vegetarians, and vegans Lacto-ovo-vegetarians are the most liberal of vegetarians, excluding only meat from their diets. Consumption of dairy products and eggs is considered acceptable. Lacto-vegetarians consume dairy products, but do not consume eggs. Vegans, on the other hand, consume only plant-based foods and exclude any products coming from animals from their diets.

    Women and Vegetarianism While only about one percent of men become vegetarians, it is estimated that four times this number of women do not eat meat. It is not clear what proportion of these women also avoid dairy products. Nutrition surveys of vegetarian women have shown that they tend to have lower levels of calcium, iron, zinc, and vitamins D and B12. For women who eat some animal products, the levels of each of these nutrients increases. The highest levels of these nutrients are seen in women who do not restrict their diets. Calcium and iron are two of the nutrients most lacking in diets of both vegetarians and omnivores. These results do not mean a vegetarian diet is unhealthy but that it needs better planning than most people give it. It also indicates that women at risk for deficiencies of the nutrients listed above are not getting them from diet or supplements. If you follow a special diet, keeping a diet diary for a week and then analyzing it for the nutrients listed above will give an indication about its nutritional adequacy. (But only an indication since all nutrients should be supplied by the diet.) This type of service is usually available from a Registered Dietitian, but you can do it yourself with a good reference book that contains tables of nutrient content of foods. Nutritional pros and cons of Meat-based and Vegetarian Diets
    Most individuals who have switched to a vegetarian lifestyle at some point in their lives (who weren't
    born into it), have done so following some form of perceived enlightenment, or after the realization that
    consuming animal products is either anti-religious, anti-earth (to save the planet), against animal rights,
    or that it is simply unhealthy.  I have been testing and treating a large number of vegetarian patients over
    more than two decades, so I'm presenting arguments for and against the consumption of animal-based
    products from a health -point of view.
    Contrary to vegan-based reviews or commentaries, people following a strict vegetarian diet are not
    healthier than their omnivorous counterparts.  In fact, on average , they suffer from as many, or more
    medical complaints as compared to non-vegetarian individuals, who include meat or eggs in their diet. There is absolutely no question that the average person does best health-wise by consuming a mixed diet that is as fresh, and hopefully as unprocessed as possible.  Beyond that, an individual assessment

    Eat like a bird - immense amounts of food - and lose weight
    Obese vegetarians? Nah, that can't be possible. Hey! We're the ones who eat all those health foods. Right? The truth is that an amazing number of vegetarians complain of problems controlling or reducing their weight despite the pursuit of an ostensibly healthy diet. Some are more than 50 pounds overweight. Could the excess weight be due to the consumption of high fat dairy products? No, it seems it's more than that. After talking with a number of vegans, those who consume virtually no animal products, I realized that some of them had weight problems too. What gives? Could it be too many nuts, prepared vegan foods and fatty soy products? I had to find out. After all, I was one of those overweight veggies. I had become a vegetarian, then vegan, because of concern for the environment and compassion for animals. Admittedly, I also expected health benefits. Yet despite years as a vegetarian, I had become overweight; actually going from a low adult weight of 87 pounds (yes, honestly but I'm only 5 feet nothing) to 178 pounds (Ack!) in just two years. On top of this, I had begun to eat when I was bored and when I was depressed and when I was stressed. Something had to change and soon.

    Vegetarianism is without doubt a very healthy option, but it is very important to ensure that yout food intake is well-balanced. This is not very difficult or as clinical as it might sound. Most of the meals you already eat probably contain ingredients from the different food groups. Vegetarians could stuff their faces with chips and chocolate at every meal, but they would not be doing their health any favours. It doesn't have to be all 'rabbit food' either.
    A varied vegetarian diet will supply all the essential nutrients you need to be fit and healthy. A typical vegetarian diet closely matches dietary recommendations for healthy eating, being low in saturated fat and high in fibre, complex carbohydrates, and fresh fruit and vegetables. This simple nutrition pyramid shows what types of food a vegetarian should eat and roughly in what quantity and proportion. Oils, butter and fats are at the top because we only need relatively small amounts.
    Bread, cereal, rice and pasta are at the bottom because we should eat these foods the most.

    Vegetarianism And Athletes In response to increased levels of cholesterol and a greater risk of heart disease, many Americans are making the switch from a diet dominated by hamburgers and hotdogs to one of veggie burgers and tofu. But is this type of diet a wise choice for athletes who need to maintain their strength and stamina? The answer to that question is a qualified 'yes.' Whether you are an athlete or moderately active, you must be aware of the nutritional implications of vegetarianism, and choose foods that will provide you with enough calories and nutrients to keep you healthy and strong. Choose Your Type There are four basic types of vegetarians. The first, lacto-ovo-vegetarians, omit meat, fish and poultry from their diets, but include animal products such as eggs, milk, yogurt and cheese. The second and third types of vegetarians are lacto-vegetarians and ovo-vegetarians. Lacto-vegetarians, while excluding eggs, do include dairy products. Conversely, ovo-vegetarians do include eggs, but exclude dairy products from their diets. Both types exclude all forms of meat. Finally, the restrictive vegan diet excludes all foods derived from animals in any form.

    For a variety of reasons, (many economic, ecological or health-related), there is considerable renewed interest in vegetarianism. Even the USDA in the fourth edition of Nutrition and Your Health: Dietary Guidelines for Americans now acknowledges that a meatless diet can adequately meet our dietary needs. Plant foods are the mainstay of a vegetarian diet, and with a little thought and attention to detail one can get the same, if not better nutrition, from choosing foods of plant origin. Generally, there are three different types of vegetarians:
  • Vegan - strict vegetarians who eliminate all animal products including leather goods and soaps made with animal fats;
  • Lactovegetarian - a vegetarian who excludes meat, poultry, fish and eggs, but includes dairy products;
  • Lacto-ovovegetarian - a vegetarian who excludes meat, poultry and fish, but does eat eggs and dairy products. The question most often asked is, " Where do I get my protein?" The answer is that protein, generally obtained from animal sources, is also

    Vegetarianism Research Vegetarians have lower rates of colon cancer than non-vegetarians (Phillips, 1980). Incidence of colon cancer has been strongly linked to the consumption of meat (Armstrong, 1975). Willett (1990) carried out a study of over 88 000 women aged 34 to 59 years. Women eating red meat daily ran over twice the risk of developing colon cancer than women eating red meat less than once a month.
