    how much you like my blog. Hah! Tuesday, August 13, 2002 It's time to start cooking. I've already made the pie crust for the apple galette. After buying the book The Cheese Plate , I wanted to have a cheese course, so bought a few cheeses. This morning, I tried to look them up on the internet, to have a little more info. No luck! One I've had before: Guilloteau goat brie. It's great, and is just what you'd think a goat brie would taste like (maybe a little milder). The other two, Jacquin Bleuette and Swiss Le Merechal, I can't find. The first is looking a little scarier than when I bought it. It's cut in a triangle, with slashes of blue through it. The texture looks like it will be soft to runny when it warms up. I'm a little afraid to serve it. I'll need to give it a try a little later.
    In a while, I'll make the ratatouille. I have eggplant from the coop and tomatoes from a friend's garden. I'd rather make it this morning, so the flavors can blend. Later, I'll make polenta to have with the ratatouille. I still need to buy greens for the salad. If all goes well, the menu is

    Summary of published paper Germination of pulses, i.e. allowing them to sprout, substantially increases their vitamin C content. Knowledge of this fact has led to suggestions that beans given out in emergency general rations should be allowed to germinate as a strategy to combat risk of scurvy. A recent study set out to evaluate the extent to which germinating pulses and legumes were a potential source of vitamin C for refugee communities with poor vitamin C status. The researchers tested a large variety of legumes which were allowed to germinate over a 5 day period. Vitamin C content was compared with a control group of legumes which had been soaked overnight and then tested for vitamin C content. The study confirmed that the vitamin C content of pulses increased greatly on germination and reached levels that would meet vitamin C requirements even when other constituents of refugee rations were grossly inadequate in this micronutrient. With most strains the recommended nutrient intake was achievable by eating less than 40 gms of germinated bean each day. General rations usually provide between 40-60 gms of bean per day. The researchers estimated that roughly half of the pulse seeds in many basic rations if germinated for between 3-5 days, would probably generate enough vitamin C to prevent scurvy. The authors also point out that the nutritional value of beans would often be improved in other ways through this process. For example, phytic acid, which is a potent inhibitor of zinc and iron absorption from legumes and cereals, would be destroyed. Emergency rations are often marginally deficient in both zinc and iron.

    WHAT YOU SHOULD KNOW
    Scurvy is nothing more than a serious deficiency of vitamin C. Although it's easily corrected with supplements, it can cause a number of alarming symptoms. Vitamin C is essential for healthy connective tissue, bones, and teeth, and without it these tissues become weak and easily damaged. Vitamin C also plays an important role in the healing process, so people with a deficiency find that wounds and burns are slow to heal. There are two forms of scurvy: adult and infantile.
    Causes
    Scurvy develops when the diet lacks adequate amounts of vitamin C. Certain conditions increase the body's demand for vitamin C and therefore increase the risk of deficiency. These conditions include pregnancy, breastfeeding, diarrhea, inflammatory diseases, burns, surgery, and exposure to intense heat or cold.
    Signs/Symptoms
    The most easily recognized tip-offs of scurvy are swollen, purple, spongy gums that are quick to bleed. Subtle early warning signs include fatigue, weight loss, weakness, irritability, vague aches, and wounds that do not heal. As the disease gets worse, the teeth may loosen and you may begin to notice bleeding under the skin, especially under the fingernails and around hair follicles. Other possible symptoms include swelling in the legs, bleeding in the lining of the eyelid, and arthritis.

In the past, scurvy was common among sailors and other people deprived of fresh fruits and vegetables for long periods of time. Description Scurvy is very rare in countries where fresh fruits and vegetables are readily available and where processed foods have vitamin C added. Vitamin C is an important antioxidant vitamin involved in the development of connective tissues, lipid and vitamin metabolism, biosynthesis of neurotransmitters, immune function, and wound healing. It is found in fruits, especially citrus fruits like oranges, lemons, and grapefruit, and in green leafy vegetables like broccoli and spinach. In adults, it may take several months of vitamin C deficiency before symptoms of scurvy develop. Currently, the recommended daily allowance (RDA) for vitamin C is 50-60 mg/day for adults; 35 mg/day for infants; 40-45 mg/day for children 1-14; 70 mg/day during pregnancy ; and 90-95 mg/day during lactation . The body's need for vitamin C increases when a person is under stress smoking , or taking certain medications.

    WASHINGTON (Reuters) - Scientists from the National Scurvy Institute (NSI) recently convened a 5 day seminar to assess progress in the War on Scurvy. The future looks bright and a cure is just around the corner announced a spokesman at the seminar. Over the past 30 years NSI, NIH (National Institute of Health) and ASS (American Scurvy Society) have spent over $30 billion on scurvy research. Pharmaceutical companies have over 80 new drugs in development to combat scurvy according to the FDA. The 5 year survival rate after diagnosis of scurvy is over 50% up from 30% just 20 years ago although 500,000 Americans continue to die of the disease each year. President Clinton has proposed a 10% increase in NSI's budget for fiscal year 1999. NSI kicked off its annual "Race for the Cure" campaign to raise additional funds for research last month. Risk factors for scurvy include cigarette smoking, diets high in saturated fat and long ocean voyages. Sailors are particularly at risk for the disease. A researcher at the University of Washington has speculated that there may be a substance in sea water that triggers the disease. Of course much more research is needed. Researchers at the University of Maryland, working on the human genome project, have identified a "Scurvy gene" From this it may be possible to develop a test to identify individuals at risk for the disease.

    WE HAVE recently had an opportunity to review the clinical histories and pathologic findings in a group of children dying with varying degrees of scurvy. In three of these infants death came suddenly and quite unexpectedly. At autopsy all showed bone changes indicative of severe vitamin C deficiency; two had hypertrophy of the right ventricle of the heart. In each patient careful gross and microscopic examinations failed to reveal any other cause for death. It is to draw attention again to the role vitamin C deficiency may play in leading to cardiac insufficiency that the following cases are being recorded.
    CASE REPORTS
    At autopsy (No. 16331) the following positive findings were noted. The body weighed 6 kg. The heart was obviously enlarged, weighing 65 Gm. This increase in size was due to hypertrophy of the right ventricle. All the valves were delicate and competent. The foramen ovale and ductus arteriosus were closed. The left ventricle did not seem enlarged. The myocardium of both ventricles was pale. The lungs contained fluid. The liver was yellowish. The line of ossification of the ribs was distinctly widened; the cartilage was movable on the shaft and the periosteum stripped from the cortex with a fair amount of ease. The meninges were delicate, and there was no evidence of hemorrhage.

    This paper was originally prepared for presentation at the Conference On controversies In Human And Clinical Nutrition, Boston University School of Medicine, Hyannis, Massachusetts. July 16, 1978 and also presented at the Annual Meeting of the Orthomolecular Medical Society, September 17, 1978, San Diego, California. This paper will discuss the history of scurvy in this country over the past eight decades and try to explain how a potentially-fatal and insidious genetic disease of such wide incidence in our population could become an unrecognized, phantom disease, to which most present day doctors pay little or no attention and are unconcerned. It will also discuss the widely accepted dietary theory which has been applied by nutritionists attempting to solve this problem in medical genetics. The author believes that the wide acceptance of this misleading dietary hypothesis is the source of the medical complacency and apathy and the dangerous continuing high incidence of Chronic Subclinical Scurvy.

    Let us take a look at the sequence of historical events in scurvy of the past 80 years and try to see what went wrong and what finally went right: The first notable date in this century is 1907 which records the first important scientific advance in our knowledge of scurvy beyond what was known to Dr. Lind in 1753. Holst and Frohlich (1907) stumbled accidentally upon this important evidence while they were investigating ship beriberi which was causing problems in the Norwegian Fishing Fleet.

At the age of 92, Dr Linus Pauling, a scientific genius with two Nobel prizes to his name, has proposed that the development of cardiovascular disease, the number one killer in the West, may have prevented our extinction. It is quite conceivable that death from scurvy may have decimated the human species, especially during the thousands of years of Ice Ages. How did we survive? According to Dr Pauling we may have developed the ability to deposit lipids (fats) and lipoproteins (fat-protein complexes) along the artery wall in order to increase our chances of surviving during vitamin-C-deficient times. In excess, lipoprotein A is now thought by many cardiologists to be the greatest single predictor of developing cardiovascular disease. For our ancestors during the summer months, when vitamin C intake was sufficient, the increased production of HDLs (carrier proteins which help to remove excess cholesterol) would remove excess cholesterol. 'This concept also explains why heart attack and stroke occur today with much higher frequency in winter than during spring and summer, the seasons with increased ascorbate (vitamin C) intake', says Pauling. Supplementing with vitamin C has been shown to help two genetically linked cardiovascular diseases, diabetic angiopathy and homocystinuria.
