Stomach cancer, has become relatively uncommon in the United States, it is the most prevalent visceral cancer (second for men, fourth for women). Nevertheless, death rates have been declining since the 1930s to become only about 35% of what they were at that time. The decrease has been worldwide and for unexplained reasons. It remains the most prevalent carcinoma in East Asia, with the rate in Japan being more than seven times that in the United States, accounting for one-third of all cancer deaths on those islands.
The repetitive ingestion of high concentrations of salt irritates the stomach lining, and this has been proposed as a potential cause of gastric cancer. In fact, the decline in the incidence of this disease has been correlated with the decline in the salt preservation of foods. In regions in which stomach cancer remains common, such as Japan, salted seafood has remained a dietary staple. The incidence of gastric cancer among first-generation immigrants from Japan to the West is similar to that in their communities of origin, but it declines to the incidence of the Western community in which the next generation resides.
This suggests that the neoplastic process begins irreversibly during childhood, regardless of relocation or dietary changes after a certain age. Because this is not a genetically determined disease, a generation that has not been exposed to the inducing irritant of salt at a critical age presumably will not suffer inordinately from this neoplasm.

Stomach cancer, also known as gastric cancer, is cancer that starts in any part of the stomach. The stomach is just one of many organs located in the abdomen, the area of the body between the chest and the pelvis. Among other organs found in the abdomen are the liver, pancreas, gallbladder, and colon. It is important to differentiate among these organs, because cancers and other diseases that occur in them have different symptoms and are treated differently.     Who develops stomach cancer?
    Scientists don't know exactly how or why stomach cancer develops. It occurs all over the world, in countries with different foods. But there has been a marked decrease in cases in the United States over the past 50 years. That is probably because we are eating less salty, cured and smoked foods and smoking fewer cigarettes than before. We are also eating more fruits and vegetables. Stomach cancer may have a family link and also an apparent connection to gastritis and stomach ulcers. It is sometimes seen in people who had stomach surgery many years before. Often there are very few symptoms in the early stages.

    What Is Stomach Cancer?
    Each year, about 24,000 people in the United States learn that they have cancer of the stomach. Stomach cancer (also called gastric cancer) can develop in any part of the stomach and may spread throughout the stomach and to other organs. The cancer may grow along the stomach wall into the esophagus or small intestine. Stomach cancer also may extend through the stomach wall and spread to nearby lymph nodes and to organs such as the liver, pancreas, and colon. The cancer also may spread to distant organs, such as the lungs, the lymph nodes above the collar bone, and the ovaries. The stomach cancer rate in the United States and the number of deaths from this disease have gone down dramatically over the past 60 years. Still, stomach cancer is a serious disease, and scientists all over the world are trying to learn more about what causes this disease and how to prevent it.     Symptoms Prevention What Is Stomach Cancer? Cancer of the stomach, or gastric cancer, is a disease in which stomach cells become malignant (cancerous) and grow out of control, forming a tumor. Almost all (95%) of stomach cancers start in the glandular tissue that lines the stomach. The tumor may spread along the stomach wall or may grow directly through the wall and shed cells into the bloodstream or lymphatic system. Once beyond the stomach, cancer can spread to other organs. Stomach cancers are classified according to the type of tissue where they originate. The most common, adenocarcinomas, start in the glandular stomach lining. Other forms include lymphomas, which involve the lymphatic system, and sarcomas, which involve the connective tissue (muscle, fat, or blood vessels). Although the number of stomach cancer cases has declined over the past 60 years, it is still the seventh leading cause of cancer death in the United States. The exact cause of stomach cancer is unknown, but most are believed to result from exposure to carcinogens (various cancer-causing agents), especially nitrates substances found in prepared foods (especially meats) that are dried, smoked, salted, or pickled. Carcinogens cause errors in the genetic code that controls growth and repair of cells.

    How and Where does the Stomach Work?
    The stomach is an expandable sack located mostly under the left lung, between the muscular "diaphragm" which pushes up the lung, and the coiled small intestine. The stomach is close-by important organs in the abdomen. To it's right is the liver , to it's lower left is the spleen , and underneath it is the pancreas . The esophagus enters the stomach at the "gastro-esophageal" junction, while the small intestine exits it at the lowermost "antrum" . The front of the stomach rests on the abdominal wall, and lower parts of it also contact the upper left kidney and "transverse" colon. You can see that the stomach is in the midst of many vital organs, and infections or cancers can spread to these organs. Important areas of the stomach itself (besides the antrum and gastro-esophageal junction) are the "greater curvature" (basically the left wall of the stomach), the "lesser curvature" (the right wall), the "fundus"

    What is stomach cancer?
    Most cancers in the stomach (A) used to appear close to the small bowel (B), but are now often found close to the oesphagus (C). Stomach cancer is the result of cell changes in the lining of the stomach. In Western Europe, stomach cancer is only about one third as common as it was 50 years ago.
    The location of the tumours within the stomach has also changed. It used to be that most of the tumours were located near where the stomach joins the small bowel, now the commonest site is close to the junction with the oesophagus (gullet).
    Stomach cancer is very common in Japan and the Japanese have developed an intensive and effective approach to screening for stomach cancer.

Liquid nitrogen delivered through the probe freezes the tumor; heated nitrogen then thaws it. This freeze-thaw process permanently damages the tumor, causing its cells to die.
