Fungally-derived phytochemicals find significance among peoples along the Pacific Rim (e.g. Japan and Thailand), on the Asian continent (i.e. China and Russia), plus inside darkest Africa (especially for the Yoruba tribe of southwestern Nigeria).
Among the more than half-a-million varieties of fungi (with over 100,000 named species), mushrooms hold value especially for Europeans, who have always appreciated the gastronomic excellence of both the domestic- and wild-growing species. Gourmet cooks, especially French, Belgian, and Austrian chefs, consider mushrooms “flowers of the fall” and label them in their recipes with this loving appellation.
Are you aware that mushrooms are the perfect food for staying trim, remaining healthy, and feeling a sense of wellbeing? email: heidih@goMendo.com Educational Opportunities Abound At Mendocino County Mushroom And Wine Fest Winemaker dinners at restaurants including the MacCallum House and the Mendocino Hotel, a lunch at the Inn at Schoolhouse Creek, and "Happy Hours"at the Thatcher Inn, include mushroom experts such as Eric Schramm of Mendocino Mushroom Company, the county's largest commercial forager of wild mushrooms, and Wild About Mushroom's Charmoon Richardson, who leads classes, cooking demonstrations and forays all over northern California. The following Saturday, November 18, at the College of the Redwoods in Fort Bragg, science professor Teresa Sholars and her Mushrooms of the North Coast class host a Mushroom Fair from 10:00 a.m. until 3:00 p.m. This culminates an eight-week class at the College and is a large exhibit of all kinds of mushrooms and their uses.

Dr Peter Mills
  • Plant Pathology and Microbiology comprises approximately 65 staff and 20 research students and visiting workers and is headed by Dr. Peter Mills. The Department provides research and development in pathology and microbiology for the horticultural industry to improve profitability for the grower, to ensure product quality for the consumer and to develop pesticide free (organic) production systems. Our work is focussed on field vegetables, mushrooms, and ornamentals. Across pathology we seek to understand viral, bacterial and fungal disease epidemics and to develop control strategies that encompass disease forecasting, biological control and the deployment of host resistance. A key component of this programme is to develop molecular diagnostic methods for the rapid detection and discrimination of disease organisms.
    Mushroom work includes pathology, strain improvement, quality, cultivation technologies and also work on mushroom pests. The Department also provides a commercial pest and disease diagnostic service to the mushroom industry through HortiTech . Other programmes in the Department involve work on the biology of pseudomonads and the identification of bacterial genes coding for insect toxins. The provision of electron microscopy and antibody production throughout HRI, and the mushroom cropping facility are the responsibility of the Department.

    The fungi shown on these pages may be found in the forests of central and coastal North Carolina. The photos and collections were made during the fall of 1995 as part of a class assignment for Introductory Mycology (Bot 220, taught by R. Vilgalys) at Duke University. Students were required to prepare a collection of 50 specimens representing a cross section of mushroom diversity from North Carolina, with notes and photos. The best student photos were selected for this homepage. Many of the specimens shown on these photos were collected during field trips to several interesting habitats in North Carolina, including the piedmont, sandhills, and coastal forest regions.

    "The First International Conference
    On Mushroom Biology and Mushroom Products"
    O n August 23-26, 1993, the First International Conference on Mushroom Biology and Mushroom Products took place in Hong Kong. Organized by UNESCO and the Chinese University of Hong Kong, the conference marked the 30th anniversary of the University, an institution that supports a wide range of mushroom research. The conference chairman, Dr. S. T. Chang, is widely noted in the field of mushroom science for his contributions to mushroom cultivation and his research into medicinal mushroom development and applications. The program consisted of poster displays and plenary sessions. Topics included cultivation technology of a wide range of edible mushroom species. bioconversion of waste materials by fungi, genetics and breeding, nutritional aspects, and the pharmacology and clinical uses of medicinal mushrooms. In regard to the medicinal uses, a highlight of the program was a presentation by Dr. Goro Chihara,(1) formerly with the National Cancer Research Institute in Japan. In the late sixties and early seventies. Dr. Chihara isolated and characterized lentinan from shiitake (Lentinus edodes), a polysaccharide which went through extensive clinical trials and is now an approved drug in Japan for use with chemotherapy in cancer patients. Dr. Chihara believes that cancer
