25 October 1998 Nothing to hide in The Tannery Food fans in Dungarvan can now rejoice, says Lucinda O'Sullivan who enjoyed a true culinary experience. Dungarvan born Paul Flynn amassed a store of culinary expertise before returning to his hometown to stun his peers with his flair, style, and astoundingly good food at his Tannery Restaurant. The Blue Room (by young Cork artist, Tom Clements) and enquired how long they were open, by asking straight out was I a restaurant critic. Down Past the library in Dungarvan we had gone before spotting the big old stone building which was (obviously) a Granary, a tannery or mill at one stage and into the little nice reception area. We could actually see the open kitchen and the bodies beavering away. The wall recesses are cleverly picked out in varying shades of vermilion to paprika, picking up the colours in the banqueting area. I also loved to see (on an ordinary weekend) a big vase of fresh lilies and orange daisies on the tables - very smart but comfortable. Two big bowls of vine tomato soup (£2.80) were drizzled with goats cheese cream were delicious and rapidly enjoyed. Spinach and ricotta tortellini with sage and lemon butter could be had as a starter (£3.80/main course £5.50). The starter portion was plentiful, tasty and satisfying topped with prosciutto, deep-fried shredded onions and garnished with cherry tomatoes and flat leaf parsley. There was also smoked salmon salad with guacamole, and roast plum tomatoes in two-portion sizes.

West is best John McKenna explores West Waterford, a "newly unearthed jewel" in the nation's culinary crown Paul Flynn left the town of Dungarvan 14 years ago to spend the best part of a decade as right-hand-man to Nico Ladenis in London, before taking over the kitchens in La Stampa, in Dublin. His work there was impressive, bit I always felt Flynn needed a smaller, more intimate space to show is work at its best. In the gorgeous room that architect Denis Looby has created out of the old tannery, near the Look Out, Paul Flynn has arrived back home with a bang. He is, in my opinion, one of the great modern Irish cooks. He mixes a ruthless discipline and correctness with an originality and stylishness which makes his cooking irresistible. Look at what he does with a bouillabaise, for example. In the recently-opened Tannery, he revises the French class to twist it from a dense fish stew into a disk which is rich, with the lightness of Thai spices, lime and coconut milk. The symmetries of the dish, with its mixture of fish and shellfish flavours, are reinvigorated, with small potatoes and Dublin Bay prawns - artfully split down the back which makes them simple to eat embracing the sweetness of the coconut.

See http://www.thetannerymall.com for a good map. The Tannery is located near downtown Newburyport at the corner of Federal and Water Streets. It is bounded on four sides by Federal St, Water St, Liberty St and Independence St. The Tannery is easily reached from I-95 at the Scotland Road exit (if you are Northbound) or the Route 113 exit if you are Southbound. If taking the Route 113 exit (going South), take a left and follow Story Avenue to where it becomes High Street. After going through the lights at State Street, the third left is Federal Street. Turn left onto Federal. We are at the foot of Federal, about 10 minutes from I-95. If taking the Scotland Road exit, turn right. Follow until you come to a "T" intersection at the traffic lights on Low Street. Turn right, cross Route 1, go up a hill on Pond Street, and bear right onto High Street. After going through the lights at State Street, the third left is Federal Street. Turn left onto Federal. We are at the foot of Federal, about 10 minutes from I-95. We are on the backside of the Tannery, on Liberty Street. The Jabborwocky Bookstore is in the center of that side, and the Nutcracker Cookery is in the left corner. That is where our door is, labeled "The Artist's Playground". Go in, past the Musical Suites, turn right, and you are there. We are Suites #5 and #6. Signs pointing to us are "The Actor's Studio", and also "Marc Clopton" and "Anna Smulowitz".

Paul Louis Toussaint Héroult (1863 - 1914)
Paul Louis Toussaint Héroult was born in 1863 into a world of country folk and cottage industries. His father, Patrice, managed a small tannery on the banks of the Orne River, at Saint-Bénin, a peaceful location where the Héroult family had lived for generations. Paul might have been expected to continue the business his grandfather had started, but rather than an honorable tanner, he became an inventor. The major influence, however, was the fortuitous meeting with an old friend of his father's, Mr. Belliot, a lawyer by profession, highly cultured, with a magnificent personal library. After school, Paul spent hours discovering the joys of reading. Science, and particularly, research and discovery, began to fascinate the Paul. His interest reaches its highest point the day he comes upon the famous work of Sainte-Claire Deville, with the unglamorous title, " Aluminum, its properties, its production and applications ". He entered the prestigious École des Mines after a brilliant entrance examination in , at the age of 19. A friendship developed between him and his chemistry professor, who was also fascinated by aluminum.

Overview of tannery module is inspired by photo, page 4xx book #4 of the Logging Railroad Era of Lumbering in Pennsylvania. The tannery and surrounding company town are inspired by the town of Leetonia, PA. Leetonia featured a large tannery, sawmill, town, and railroad facilities. The placement of the buildings on the tannery module loosely follow the placement of buildings in lower portion of Leetonia. The major difference is that the model tannery is on the opposite end of town. The majority of the modeling on this section was done by Paul Miklos. The exceptions being the company houses which were built by Clarke O'Byrne, the company store built by Ed Heeg, and the CPL office and Post Office built by David Keith.
The company houses were built by Clarke O'bern. Paul Miklos built the privies, sheds, and added the details.
Farm animals were common in Leetonia. This house is the exception, having pigs. Most families had cows. The cows would graze in the pastures above town, returning each twice a day for milking.
