After buying the book The Cheese Plate , I wanted to have a cheese course, so bought a few cheeses. This morning, I tried to look them up on the internet, to have a little more info. No luck! One I've had before: Guilloteau goat brie. It's great, and is just what you'd think a goat brie would taste like (maybe a little milder). The other two, Jacquin Bleuette and Swiss Le Merechal, I can't find. The first is looking a little scarier than when I bought it. It's cut in a triangle, with slashes of blue through it. The texture looks like it will be soft to runny when it warms up. I'm a little afraid to serve it. I'll need to give it a try a little later.

Knowledge of this fact has led to suggestions that beans given out in emergency general rations should be allowed to germinate as a strategy to combat risk of scurvy. A recent study set out to evaluate the extent to which germinating pulses and legumes were a potential source of vitamin C for refugee communities with poor vitamin C status. The researchers tested a large variety of legumes which were allowed to germinate over a 5 day period. Vitamin C content was compared with a control group of legumes which had been soaked overnight and then tested for vitamin C content. The study confirmed that the vitamin C content of pulses increased greatly on germination and reached levels that would meet vitamin C requirements even when other constituents of refugee rations were grossly inadequate in this micronutrient. With most strains the recommended nutrient intake was achievable by eating less than 40 gms of germinated bean each day. General rations usually provide between 40-60 gms of bean per day. The researchers estimated that roughly half of the pulse seeds in many basic rations if germinated for between 3-5 days, would probably generate enough vitamin C to prevent scurvy. The authors also point out that the nutritional value of beans would often be improved in other ways through this process. For example, phytic acid, which is a potent inhibitor of zinc and iron absorption from legumes and cereals, would be destroyed. Emergency rations are often marginally deficient in both zinc and iron.

The future looks bright and a cure is just around the corner announced a spokesman at the seminar. Over the past 30 years NSI, NIH (National Institute of Health) and ASS (American Scurvy Society) have spent over $30 billion on scurvy research. Pharmaceutical companies have over 80 new drugs in development to combat scurvy according to the FDA. The 5 year survival rate after diagnosis of scurvy is over 50% up from 30% just 20 years ago although 500,000 Americans continue to die of the disease each year. President Clinton has proposed a 10% increase in NSI's budget for fiscal year 1999. NSI kicked off its annual "Race for the Cure" campaign to raise additional funds for research last month. Risk factors for scurvy include cigarette smoking, diets high in saturated fat and long ocean voyages. Sailors are particularly at risk for the disease. A researcher at the University of Washington has speculated that there may be a substance in sea water that triggers the disease. Of course much more research is needed. Researchers at the University of Maryland, working on the human genome project, have identified a "Scurvy gene" From this it may be possible to develop a test to identify individuals at risk for the disease.

WE HAVE recently had an opportunity to review the clinical histories and pathologic findings in a group of children dying with varying degrees of scurvy. In three of these infants death came suddenly and quite unexpectedly. At autopsy all showed bone changes indicative of severe vitamin C deficiency; two had hypertrophy of the right ventricle of the heart. In each patient careful gross and microscopic examinations failed to reveal any other cause for death. It is to draw attention again to the role vitamin C deficiency may play in leading to cardiac insufficiency that the following cases are being recorded. CASE REPORTS At autopsy (No. 16331) the following positive findings were noted. The body weighed 6 kg. The heart was obviously enlarged, weighing 65 Gm. This increase in size was due to hypertrophy of the right ventricle. All the valves were delicate and competent. The foramen ovale and ductus arteriosus were closed. The left ventricle did not seem enlarged. The myocardium of both ventricles was pale. The lungs contained fluid. The liver was yellowish. The line of ossification of the ribs was distinctly widened; the cartilage was movable on the shaft and the periosteum stripped from the cortex with a fair amount of ease. The meninges were delicate, and there was no evidence of hemorrhage.

[The History of Scurvy] Let us take a look at the sequence of historical events in scurvy of the past 80 years and try to see what went wrong and what finally went right: The first notable date in this century is 1907 which records the first important scientific advance in our knowledge of scurvy beyond what was known to Dr. Lind in 1753. According to Dr Pauling we may have developed the ability to deposit lipids (fats) and lipoproteins (fat-protein complexes) along the artery wall in order to increase our chances of surviving during vitamin-C-deficient times. In excess, lipoprotein A is now thought by many cardiologists to be the greatest single predictor of developing cardiovascular disease. For our ancestors during the summer months, when vitamin C intake was sufficient, the increased production of HDLs (carrier proteins which help to remove excess cholesterol) would remove excess cholesterol. 'This concept also explains why heart attack and stroke occur today with much higher frequency in winter than during spring and summer, the seasons with increased ascorbate (vitamin C) intake', says Pauling. Supplementing with vitamin C has been shown to help two genetically linked cardiovascular diseases, diabetic angiopathy and homocystinuria. 'Vitamin C should lead to the abolition of cardiovascular disease as a cause of human mortality'
