In 1997, after suffering a collapse while rowing, 63-year old Donald Gazzaniga was diagnosed with congestive heart failure. Unlike other heart ailments, bypass surgery is not a treatment for this; and although there are medications, congestive heart failure patients must look to a heart transplant -- for relief -- assuming they survive until their name reaches the top of the transplant waiting list. Don was placed on the list at Stanford University Hospital Medical Center.He was told to watch his diet, which he had always tried to do, and especially to consistently eat foods that are as low as possible in sodium content.It is surprising how many people do believe that a low-sodium diet means that you simply ban the salt shaker from your kitchen and table.Actually, a very large percentage of ALL the foods we eat contain varying amounts of sodium -- many very much indeed.It is naturally present in many foods, and more is often added during the preparation of commercially packaged foods as well. Gazzaniga, who had always been interested in food and cooking, now had an incentive to develop special recipes.The immediate result is the recipes in this book. They are as much as 70% lower in sodium than those of other low-sodium cookbooks.Whereas doctors often use the figure 2000 mg or 2500 mg daily as a "low-sodium" goal for their heart disease and hypertensive patients because they don't believe it's possible to concoct a diet lower in sodium than that, these recipes, whose sodium content, carefully calculated according to existing standards, a menu of these recipes will yield no more than 500 mg.daily.What will delight those who go to them for health -- and their families -- is that by some magic Gazzaniga has been able to present the cook with finished dishes that are varied, easy to make, and as delicious as any "regular" dishes. Please tell me that at least 1 of the bread recipes will work.I just made "basic bread" or tried to.After over an hour of having it sit in a warm place there was no sign that it was going to rise. It seemed to be an odd texture.I've been making bread for 43 years and never had a recipe fail to this extent.The dough is now sitting in the trash can.

My old standby is now sitting in a bowl to rise and I tried cutting the salt in half.I see the value in a no salt or low salt bread but have never had much luck getting any bread to rise without at least some salt in it.

I was diagnosed with Meniere's Disease recently and told I had to go on a strict low-sodium diet (no more than 500 mg at a time, 1500 mg daily total).After reading the reviews, I purchased three of Donald Gazzaniga's No-Salt Lowest-Sodium Cookbooks; this one, the Light Meals Book and the Baking Book.These were supposed to be tasty dishes and relatively easy to make.

After a lot of wasted time and money, I have found only three receipes that have any flavor when made to the recipes specifications.Every single cooking time, even when only approximated, has been completely off the mark.I found that I had to double and, in some cases, triple the times listed.The only exception was the bread recipes, in which I had to cut the time in half.I have not tried too many of the baking recipes simply because I ran out of money with all the failed attempts due to incorrect cooking times.

Another issue I had was that many of the recipes call for some form of alcohol.As someone who does not like alcohol in the house, I found it very disappointing that no alternative was offered.

It is nice to have the sodium counts listed for each ingredient, as well as for the total dish.Unfortunately, I have trouble trusting the numbers when the cooking times were so wrong.The only good thing I can say about this book is that it gave me a basis to begin researching my own recipes.Other than that, it and the other two books are merely collecting dust on my bookshelf.

An excellent resource for anybody who must switch to a low sodium diet, for heart or kidney health.It has recommended products to buy, and many excellent recipes.There are lots of recipes for low sodium bread, using a bread machine.As a diabetic, I don't use much bread, but for anyone who can still eat bread, this book is an excellent source for good recipes.I think it would be a good basic cookbook for any family.

I really like the nutrition discussion in the beginning of this book.It has helped me understand the basics for meal planning.The recipes are good, and I've tried a few and found them quite nice.The family-sized servings are great for sharing.Kind of a "covert" way to sneak low-salt cooking to friends and family.I'd recommend this book for anyone starting out with a low-salt diet.

Glad to see that this book has recipes for the everyday kind of foods that we eat. My husband was so happy to be able to work bread into his low-salt diet again. We have only tried a couple recipes so far but there are many that we will try. He is a meat and potatoes/processed food kind of eater and it is hard to get him to try all the veggie and odd recipes that many cookbooks have.
