Product Description

The fresh, robust flavors of Italian grilled sandwiches.

A panini is an Italian-inspired pressed sandwich enjoyed throughout Italy and, increasingly, in North American cafés, restaurants and kitchens. Italians regard panini as fast food thanks to its easy preparation, which also accounts for its success in North America. Sales of panini makers have skyrocketed, with small appliance manufacturers releasing new models each year.

Tiffany Collins provides great recipes that replicate the bistro experience and maximize the use of a home panini maker. Among the recipes for this vibrant, flavorful food are:

  • Salami, prosciutto, mozzarella panini with roasted red peppers; Philly cheesesteak panini
  • Bacon, spinach and hard-boiled egg panini; smoked salmon, red onion, cream cheese and caper panini
  • Sweet Italian sausage, provolone and tomato sauce panini; hummus, red onion and Swiss cheese panini
  • Pulled pork panini; Tuscan tuna and white bean panini; shrimp club panini
  • Cuban panini; smores panini; sliced beef, caramelized onions and gorgonzola panini
  • Smoked turkey, brie and Granny Smith apple panini; south of the border turkey panini with perfect guacamole.

This Italian tradition can now be experienced at home and enjoyed by the whole family.

4-0 out of 5 stars Good recipes.... but 200 is stretching it
This book had some good recipe suggestions. A lot of the recipes have a pretty standard ingredients that one might already have on hand.

However, to say that there are 200 recipes is a bit of a stretch. It seemed like a lot of the recipes were variations on each other (i.e. dijon turkey, honey dijon turkey)rather than truly different recipes. I would rather have had the book be more upfront and be 50 recipes with suggested variations, but I guess that just doesn't seem as catchy.

5-0 out of 5 stars Freat Recipes
This book has great variety for panini that are easy to do. great to eat. and fun.

5-0 out of 5 stars Love this book
I am a cookbook junkie, and have recently been on a panini kick. This cookbook is great.Has lots of creative combinations and ideas.Everything I've tried so far has been yummy and easy to make.I am planning on combining this cookbook with an electric panini maker for an upcoming wedding gift.

5-0 out of 5 stars Terrific Recipes!
With a glut of panini recipe cookbooks on the market, it is my opinion that "200 Best Panini Recipes" stands head and shoulders above the others. There is a good selection of recipes for various types of condiments (aolis, mayonnaise, remoulades....) and the paninis range from your basic Ham and Cheese to a more exotic Blue Cheese, Chicken and Apple Panini. For those that like seafood, there are some really great Po'Boy panini's. Wonderful pictures. All in all, one of the best cookbooks I have. ... Read more

5-0 out of 5 stars Delicious!
Simple Italian Sandwiches is much more than a sandwich book - it's about eating simply, eating well and enjoying each and every bite.I can't say enough good things about this cookbook -- it has taught me to look at food in new ways that lead to delicious and nutritious meals.

5-0 out of 5 stars Best Panini's Ever
These recipes are delicious.Using the tips on breads and fillings in this book took my paninis to a whole new level.I highly recommmend this book to anyone who is imterested in making seriously good paninis.

3-0 out of 5 stars A place to start
Good ideas for sandwiches but I always tweak the recipes in some way or other.

2-0 out of 5 stars You don't need this book to make a panini
I do believe that at some point everyone will own their own restaurant, have a Food Network TV show and /or their own cookbook. This book is evidence of this.

The authors are friends and partner's of Mario Batali. They are not Italian. They have been to Italy and had a panini. They opened up a cute little panini bar in NYC and charge way too much money I am sure for a simple sandwich. I think it is sweet how they try to pretend to be regular people with their no kitchen little panini place even though they are part of the Batali business empire. Strangely - even though the recipes are so simple a monkey could crank out panini's they needed a co-author. I don't know for what since almost all the recipes read like this:

Mozzarella, Tomato and Basil Panini

Put sliced tomato on ciabbatta roll with mozzarella and a few leaves of basil. Grill in panini press. Slice in half and serve.

It is a small book with only a few photos of food but a bunch of those arty photos of a restaurant chalkboard, a few people in the sandwich shop, a drizzle of oil, a close-up of a dining check. I mean - please. How about some photos of sandwiches? Duh?

Panini's are really in right now and there are many books coming out this year on them. My recommendation is try to catch Wolfgang Puck on HSN when he is hawking his panini grill - he will show you more panini's then you will ever need to know in about fifteen minutes.

5-0 out of 5 stars Delicious Panini and Tramezzini
I just returned from Roma. One of the things we ate the most for lunch was Tramezzini, due to the heavy availability of them everywhere. They almost always offer to grill it for you. We also noticed that nearly every one we saw had sliced boiled eggs on it. I had one that was a simple chicken salad with green olives, sliced hard boiled eggs, slice of cheese, and rocket (arugula). The sandwich was fantastic. My girlfriend had one that was just bologna and artichokes and it was out of this world. We don't even like bologna but for some reason in Italy, it's edible. I haven't actually made a recipe from this book yet, for it is a gift for my girlfriend and she will be receiving it tonight. I did however read through it and was very happy to see the way it was written. From the basic ingredients list and the several trips I've taken to Italy in my life, I know that this is one great book. If I can remember that I wrote this, I'll update it in a month or so. ... Read more

Product Description

Panini are little sandwiches that are put through a press that warms up the filling and gives the bread a delicious grilled flavor. Ten years ago, you would have had to get on a plane and gone to Italy to enjoy one, but today you can find panini everywhere--in Italian restaurants, restaurant chains like Panera, even higher-end supermarkets are selling panini in their take-out foods sections. Because its popularity, the panini press (think a small George Foreman Grill) has become the hottest selling small appliance on the market. Everyone is selling them. Williams-Sonoma and Sur La Table carry brands like LeCreuset, All-Clad, and Krups, while Target sells a Hamilton Beach model for less than $50 and Wal-Mart a Breadman version for $39.95.
"Panini Express" contains easy recipes for 70 deliciously different sandwiches you can make using your panini press. "Panini Express" does not confine itself only to authentic Italian Panini recipes, but instead will explore a world of flavors (like the Catskill Cubano with ham, turkey, Swiss, and a hoisin-lime dressing). In addition to the sandwich recipes, there are recipes for four homemade breads if you want your sandwiches completely from scratch, as well as for mayonnaises, spreads, and other tasty sandwich slathers to up the flavor quotient.

5-0 out of 5 stars Delicious!
As we were checking in books, we started salivating over the pictures of the sandwiches in this book. To celebrate a colleague's last day, we made some of the paninis. Delicious!

5-0 out of 5 stars Recipes are Great!
I love the recipes for making first your own bread and matching it with the topping. Daniel Leader did a good job putting this book together.

5-0 out of 5 stars Great Book
This book has great recipes and amazing photos.Shows how to make all of the great breads as well as how to build the sandwiches.Would definitely recommend.Makes a great gift for the kitchen wizzard in your life.

5-0 out of 5 stars My husband the picky eater
My husband is a hard sell on cheeses. He's a hard sell on weird combos as well. This book was given to us as a christmas gift. We LOVE LOVE LOVE this book. We have made at least half the recipes. The flat bread recipe is simply nummy. We always make a double batch of it so we can eat some right away with hummus. My husband who is scared of cheeses and weird flavor combos has come to really enjoy BOTH those things from this book. He was afraid of it at first, and the more we tried, the more he loved. The avocado shrimp is just amazing. The garbanzo bean with yogurt we've made a couple times. The apple and gorgonzola is so yummy. Almost every page is newly inspiring. Things I'd NEVER think to put together are just amazing. This is one of my favorite cook books and we try and make a new sandwich every week. There is so much more to making a panini then just heating stuff between bread I learned. The order matters. The temp matters. The bread matters. And it really brings it to the next notch. Very good guys.

5-0 out of 5 stars great variety
I actually bought this for my niece. She and her family love it, she loves the variety, many choices for picky eaters, the kids love the PB&J's!!I bought a 2nd copy to send to her sister & her family too!!!Highly recommended!!

2-0 out of 5 stars Taste Good, But....
This cookbook is too complicated. Some of the recipes, like the stuffed apple pancakes, only use the panini maker to score the pancakes with grill marks after you cook everything else in other pans. Then, in describing the process, it says cook for 2 mins, then cook for another 3 minutes. Why not save steps and just say cook for 5 minutes, stirring occasionally?
You can adopt a lot of these recipes for use elsewhere, or re-write them to simplify for a weeknight meal. If I were the editor, I'd have red-lined page after page!!!

4-0 out of 5 stars Sandwich lover
Bought my husband a panini press for Christmas and he now wants a panini sandwich almost everyday.Needed more recipes so I bought a couple of panini books and love them. Some recipes are a little fancy but overall we love the books.

4-0 out of 5 stars Good recipes, but a little over the top...
There are some great recipes in here, but some of them are ones I would never make. For example, the chapter on seafood. I don't really want a fish panini! The classic recipes are in here and still good, but there are a lot of fancy ones!

4-0 out of 5 stars Hot Off The Sandwich Press!
When is a sandwich not just a sandwich? When it's a Panini! Having exploded in popularity over the past few years, the panini - essentially a grilled bread filled with meats and cheeses - originated in the sidewalk cafes of Italy and has spread across the Atlantic and around the world. Along comes Melanie Barnard's cookbook, devoted entirely to this mouth-wateringly simple sandwich.

Panini is chock full of delicious and varied recipes that will appeal to old and young alike, regardless of their culinary skills. Anybody with so little as a heavy-bottomed pan and an appetite for a quick and hearty meal will be able to make a tasty and filling panini.
Recipes range from the simple, tried-and-true (Peanut Butter & Jelly, Three Cheese And Tomato Melt) to more complex (Grilled Salmon With Chipotle Aioli) and regionally inspired (Shrimp Po'Boy, Traditional Cubano). There are even breakfast and dessert paninis, and in addition to sandwich recipes, Barnard offers grilling tips and serving suggestions, such as appropriate wines and side dishes. The recipes are straightforward and rely on easy-to-find ingredients, and many include beautiful photographs that perfectly showcase each sandwich creation. With 40 different variations, it's possible - and tempting - to try a new recipe every week, and never grow bored.

5-0 out of 5 stars Simple, delicious sandwiches!
First, a note:This book came out several years ago, before you could buy anything resembling a panini press! So the title, which was perfectly appropriate when the book was published, now may seem misleading to people who are looking for recipes to go with their newly-purchased home panini press.Folks, this is NOT a book of grilled panini recipes. But what it is, is a book of simple, delicious Italian sandwiches made with easy-to-find ingredients.

I bought this book when it first came out, and several of the recipes have become standards. The Orange Marmalade Fritatta Panino is a delicious, barely-sweet breakfast sandwich I make at least a couple of times a month. It's so simple I don't even need to read the recipe anymore.

The grilled chocolate sandwich shown on the cover is a simple, delicious snack, and always surprises friends or guests.

There are other sandwiches I've loved from this book, made with roasted red peppers, oil-cured olives, tasty tangy goat cheese... But trust me that every sandwich is well planned, beautifully photographed, and every one I've made is worth trying.

1-0 out of 5 stars Pretentious
I was so disappointed in this book because there were very few recipes that called for a panini maker. In addition, most of the recipes consisted of specialty foods that you wouldn't normally have in your pantry or fridge. For example some of the ingredients needed were: Greek oregano, white bread made with unbleached flour, cornichons (aka pickled gherkin cucumbers), imported canned tuna, etc.The author recommended only "high end", imported/gourmet foods that were organic. She even noted that although expensive, it's worth spending the extra money.I personally can't see putting all that effort into finding gourmet ingredients for a sandwich.

5-0 out of 5 stars I'd like to counteract the unfair criteria of some of the other reviews.
Many reviews of this book complain that it was recommended as a companion to a purchases of a panini press or sandwich maker, and I can see why they are disappointed. Amazon has many strengths, but the quality of its recommendations is not one of them. These reviews are helpful in letting purchasers of sandwich makers know that this book doesn't have many of the grilled meat and cheese sandwich recipes that many people are looking for.

I wish, however, that so many of these reviews didn't give the book one star and lower its rating, because it's a lovely book with ideas for simple, delicious toppings and fillings for grilled bread. These are recipes that would be appropriate for a light lunch or supper, for appetizers, or for cocktail parties. Many of the recipes feature lemon, capers, olives, oregano, hot pepper flakes, and garlic, adding flavor to vegetable fillings or small amounts of fish, chicken, or cheese. The recommendations that ingredients be organic, cage-free, etc., are not nearly as frequent as some disgruntled reviewers would have you believe, and of course you are always free to use ordinary grocery store fruit, vegetables and eggs.

There are also some sweet recipes. I love the recipe for Baked Fresh Fruit Bruschetta: sliced nectarines baked on bread with a little butter and sugar, served for breakfast with caffe latte.

1-0 out of 5 stars Disappointed would be generous
To say I was disappointed in this book would be a generous statement. The author(s) apparently wanted an elitest book geared towards the "natural is good" movement, i.e free range chicken eggs, etc. Also, they seemed to try and hide a crosteni/bruschetta book in the garb of a panni book; very few grilled panini recipes. It is a diservice to recommend this book with a panini press.

5-0 out of 5 stars Awesome appliance
I love this product and use it several times a week.Whoever suggested getting a paninni machine with flat cooking surfaces was right. You can do so many more things.Imagine french toast done perfectly with no flipping.Reheats pizza, rolls etc perfectally - and makes awesome sandwiches. No fat necessary for use. ... 4-0 out of 5 stars The Best Panini Book I've Found
I searched for a good panani cookbook to compliment a Christmas gift of a panini press/maker. While it's a small paperback, it has great recipes and it's all panini recipes. I looked at several books in the brick-and-mortar book stores and most gave panani sandwiches a passing glance and moved on to other recipes. At least McAuley stayed with the title of her book and didn't go astray. You'll also find a good mix of breakfast, lunch and dinner offerings and even some tasty all-veggie recipes. It's the best all-panani book I've found so far and well worth the small price.

5-0 out of 5 stars The perfect sandwich!
Jo McAuley's PANINIsurveys the grilled Italian sandwich which is becoming so popular in bistros and delis in North America. You'd think panini sounds too exotic to produce at home, but quite the opposite: McAuley demonstrates it's the perfect sanwich for producing in a home kitchen and packs her cookbook with recipes for vegetarian, meat, and even dessert sandwiches to prove it. Color photos face nearly every page and encourage cooks to sample.

Fans line up nightly to eat her imaginative filled andflat pizzas, inspired focaccia, savory tarts, breads, snacks, andspirited pastas. Now home cooks can make any one of the 200 recipes inless time than they would spend waiting in line at the ever-popularAngeli Caffe!Amazon.com Review
"Earthly simplicity," Evan Kleiman calls the certain essential extra that makes the foods of Angeli Caffé in Los Angeles so special. "Angeli food," she writes, "is 'roots food' served in a city where roots are hard to seeor find.... It is a cucina reduced to the most basic elements.... Foodreduced to basic taste components where nothing is covered up; complexitysimply for its own sake is banished."

Chef, restaurant owner, and food writer Evan Kleiman starts Pizza PastaPanini with a pizza dough recipe that will make enough dough for foureight-inch pizzas. This is intentional. The biggest secret to "successful"pizza, Kleiman reveals, is making the dough frequently (learning throughrepetition) and always having some on hand, either in the freezer or in therefrigerator. "The more you do it," she writes, "the easier and morenatural it becomes--like most things in life."

And what a life. For it includes recipes for pizza, calzone, sfincione (thedouble-decker pizza of Sicily), panzerotti (which are little calzone friedin oil), focacce, and savory tarts, delectable treats one and all. You'llalso find recipes for pastas to match the seasons and their ingredients. There are recipes as well for panini, cicchetti (Venetian antipasti),bruschetta, and tramezzini (an Italian translation of English teasandwiches). All of it is straightforward and easy to accomplish, particularly the more you do it.

While all these recipes (some 200) are deeply rooted in the Italian rustictradition, Kleiman doesn't for a moment overlook her immediate whereabouts. This is a Los Angeles cookbook, but one based on truth, not artifice. Andthat's why FaithWillinger describes the food of Angeli Caffé as "cucina rustica from the provincia California." 4-0 out of 5 stars Mmmmmm... pizza...
Sherman's book walks you through from start to finish: equipment, tools, doughs, breads, sauces, and finally, the complete recipes. This isn't an exhaustive cookbook; it's meant to give you the how-to and provide a handful of samples in different areas, such as meat pizzas, vegetable pizzas, breakfast and dessert pizzas, and then a similar array of panini.

The directions are quite thorough, and include many little tips along the way. Unfortunately, there are also a few missing bits of information. For instance, one section refers to a previous one to provide benchmarks for how the doughs should appear once kneaded. Unfortunately, that other section tells you to view photos at a URL that no longer exists.

The good news is, the recipes are delicious and easy. I enjoyed the various pizza doughs we made from Sherman's recipes, as well as the homemade pizza sauce. The Artichoke & Brie Pizza was a nice change of pace, and the homemade version of a Quattro Formaggio (four cheese) Pizza was definitely better than the commercial equivalent. There's a 'Tuna Meltdown Panino' in here that combined such ingredients as tuna salad, gouda, and avocado to wonderful effect (a bit tough to flip thanks to that tuna salad, but so delicious it's worth it). The recipe instructions are clear and easy to follow, although there are no photos (not a big deal with most parts of making pizza and panini, but I know they're important to some folks).

Make sure you read the informational/how-to parts of the book before you dive into the recipes. After that, however, I think you'll find it so surprisingly easy to make your own pizzas that you'll be tempted to do it every week!

The Complete Idiot's Guide to
Pizza & Panini:
Tantalizing Recipes that will Turn your
Kitchen into your Favorite Pizza Parlor
By Eric Sherman
A review/interview by Marty Martindale
For some pizza is a way of life, and if almost any food, though abbreviated, is supported by a crust, life becomes terribly good. Erik Sherman is a pizza purist. He is not looking for cooks who instinctively avoid yeast. He feels crusts are simple, ten of them, and he shares his years of well-learned tricks for simple success. He also lines out some tasty toppings and sauces for a wide range of pizzas, not just the Italian type, originally known as "tomato pie."
He divides his pizza recipes into four categories:Meat, Vegetable/Garden, Morning Pizza and Global. Global is especially interesting, for he gives recipes from nine cultures:from Indian to Scandinavian, Middle Eastern to Russian. What a great start for some unusual entertaining?
Sherman's Panini recipes run from the Ruben to the Oyster Po'Boy, a Tuna Meltdown and many more. These are followed by his Plant-Filled (vegetarian) Paninis. He internationalizes these too, specifying which of his nine bread doughs work best.
Crusts on either the pizza or the Panini need the correct textures. The pizza dough needs to be on the moist side for open texture, he emphasizes. "The more you hold back on the flour, the happier you will be with the result," he promises. With mixed grains, he advises making a porridge of these grains with water, then add the porridge mixture to the flour when you add the other ingredients.
After taking Sherman's "pizza/panini course," you will feel at home with phrases like, "Heavily dust your peel," which means you will generously lace your pizza paddle with cornmeal. You will also have mastered Sherman's 11-page glossary and find yourself using words like "Pissaladiere and Flaeskeaggekage!"You will also come away wanting to address whether or not a pizza stone in your life. Sherman's all for using a large, unglazed ceramic tile as pizza stone. He explains, "Pizzas in Italy cook in wood-fired ovens 700 to 900 degrees F. For this reason, get your conventional oven hotter by preheating your tile in the oven to 500 and waiting 30 to 45 minutes before inserting pizza. If your cheese topping browns before the crust is done, delay adding the cheese the next time." He feels pizza should be perfectly cooked in ten minutes.
Pizza, a life quest. In an interview, Eric tells us there will be more to the Complete Idiot's Guide to Pizza and Panini, and he will move it to the web with new appendices and much more. "Remember to experiment," he adds.

1-0 out of 5 stars Don't buy this book.
I wish I hadn't bought this book, I was looking for some simple ideas for sandwiches and wraps. This isn't it!

5-0 out of 5 stars A beautiful book
This is an absolutely lovely cookbook. The bread recipes are fantastic - my focaccia and white bread recipes come from this book, and always turn out great. Because it's a sandwich book, the recipes can easily be adapted if you don't have all of the ingredients on hand, but they are certainly worth going the extra mile for. The Cubano recipe is fantastic, and I find myself making the Inside-Out French Grilled Cheese every summer. Highly recommended.

2-0 out of 5 stars Sandwich book
It's a good book for some different sandwich /lunch ideas but it takes quite a few special ingredients to craft these meals. This is not the book to put some variety in your sack lunch that you take to work. THis is the book you need when you have you mother in law over for lunch and you want to impress her with an exotic sandwich

4-0 out of 5 stars Delicious!
A fantastic book to use with your panini press. The recipes are bold and delicious.Say goodbye to boring sandwiches! ... Read more
