Cashew Truffles

6 oz semisweet chocolate,
2 tbsp butter
1/4 cup (heavy)whipping cream
1 tbsp shortening
1 cup semisweet or milk chocolate chips
3 tbsp chopped cashews
165 Calories Per Candy.
Yield:15 Candies.
Candied Orange Peel 8 oranges water 1 cup boiling water 4 cup sugar Wash the oranges. Cut into halves and squeeze out the juice. Use the juice for some other purpose, of course. Place the oranges into a large saucepan and cover with cold water. Place over high heat and heat to a boil. Add cold water to cover again. Heat to a boil and drain. Repeat this process five times in all. Drain well and scoop out the pulp. Cut the oranges into 1/4 inch wide strips. Combine 1 cup of boiling water with 2 cups of the sugar. Heat until the sugar is dissolved. Stir in the orange strips. Place over medium heat and boil for about 30 minutes, until all the liquid is evaporated. Watch carefully so the peels don't scorch. Cool. Roll the strips in the remaining 2 cups of sugar. Place on waxed paper to dry. Package and store in airtight containers. in a plastic bag until you have enough to prepare candied peel. You may

  • Nothing is more important to successful candy making than understanding, and getting the correct thermometer reading
TO DO: The first thing that should be done each day, before you start, is to TEST YOUR THERMOMETER: Immerse the thermometer into cold water. Bring the water to a boil. At what temperature DOES water boil today at your house?
We are taught that water boils at 212 degrees...well...very seldom! At sea level water boils at 212 degrees (on a sunny day.) Water will boil at different temperatures depending on altitude. Most of us don't live at sea level...and it can be cloudy or raining...So we learn to compensate:
If YOUR water boils at 210 degrees, you should ALSO reduce the candy-cooking time by 2 degrees. (Most of the time, water boils here about 208 degrees). HERE'S HOW IT IS: IF you were to cook the candy to the usual - say - 280 degrees ON the thermometer, then it would be 2 degrees overcooked. Since the weather or ground level has caused your thermometer to be 2 degrees off, you would need to cook it only to 278 degrees. Try not to cook candies on a rainy day. The barometric pressure, when the air is heavy- on rainy and cludy days, holds the thermometer down. Candy is done sooner too. "Make candy when the sun shines," ...motto of good candy makers. It is very difficult to make candies that turn out perfect on rainy days...even for an experienced candymaker. I recommend a TAYLOR or WILTON thermometer. They are around $10-15.00. These are encased in metal and the bulb will not accidentely touch the bottom of the pan and give false readings. I also use it to stir with if I am making candy that should be stirred.

The Story of the Candy Cane
There once were two villages in a far off land. One was in a valley and one was on a mountain top. The people in the mountain village wanted to give each person in the valley a gift of love at Christmas. The people in the valley were having difficult times, but those in the mountain village were doing well. (Sometimes when we are on a mountain top we can help those who are going through a valley in their lives too.) So a committee was formed of townspeople to see if someone would be able to think of something special. Money was limited, and each gift had to be of equal value to each person. After much time and discussion a decision was finally reached. An elderly gentleman who had loved Jesus for many years and who was well respected and loved, came up with the idea of the candy cane. Now, you may be thinking, what is so special about a candy cane and how can it ever be tied in with the real meaning of Christmas? Well, here is how and why...

This charming cottage is actually quite simple to assemble thanks to Kari von Wening, the owner of Takes the Cake Bakery in Pasadena, California. Every holiday season she turns out literally hundreds of decorative gingerbread structures, and over time she has figured out the easiest way to go about building them.
If you set aside several hours on three days to make the house, that will allow plenty of time for all the icing to set firmly and plenty of time for you to have some fun. The completed house can stand for up to one month.

DOUGH

6 3/4 cups all purpose flour
4 1/2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt 3/4 teaspoon ground cardamom 1 1/2 cups solid vegetable shortening 1 1/2 cups sugar 3 large eggs 3/4 cup robust (dark) molasses Sift flour, ginger, cinnamon, baking soda, salt and cardamom into medium bowl. Using electric mixer, beat shortening in large bowl until fluffy. Add sugar and beat to blend. Beat in eggs 1 at a time. Add molasses and beat on high speed until well blended. Add dry ingredients in 4 additions, beating at low speed until dough forms. Divide dough into 6 equal pieces. Flatten each piece into rectangle. Wrap each in plastic and refrigerate until firm enough to roll, at least 6 hours.
