The Vikings
VIKINGS, collective designation of Nordic people Danes, Swedes, Norwegians who ranged abroad during a period of dynamic Scandinavian expansion in the Middle Ages, from about AD 800 to 1100. Called the Viking Age, the period has long been popularly associated with unbridled piracy, when freebooters came swarming out of the northlands in their predatory longships to burn and pillage their way across civilized Europe The name "Viking" was first used by foreign authors in the 11th century AD. Its origin is probably the Swedish word for bay, "vik". This shows the close connection between the people and the sea, of which they were totally dependent for their livelihood. The Vikings are often considered wild, drunken, merciless robbers. In fact, their main occupation was farming and trade. Not every Scandinavian was a professional warrior or Viking, and not every Viking was a pirate. The motive causes of Viking Age expansion are complex. Land shortage in Scandinavia, improved iron production, and the need for new markets probably all played a part. The first recorded Viking raid was a seaborne assault (793) by Norwegian marauders on the Holy Island of Lindisfarne, just off the northeast shoulder of England. Growing evidence indicates, however, that considerable overseas Viking migration, west across the North Sea and east across the Baltic, occurred long before that.

Recipe Based on: Wonderful, Wonderful Danish Cooking by Jensen
6 Medium Eggs beaten
1/2 Cup Milk
1 Cup Flour
2 Teaspoons Sugar
1/2 Teaspoon Salt
1/2 Cup Half And Half
Butter
Sugar
Cinnamon
1 Lemon Lemon Juice
Beet Soup

12 Large Beets
2 Pounds Short Ribs
1/2 Cup Lemon Juice
1/2 Cup Sugar
1 Teaspoon Allspice
1 Medium Onion thinly sliced
Salt to taste
1/2 Teaspoon White Pepper
Sour Cream for garnish
Wash beets and scrape them. Do not peel them. Cut beets into small chunks. Place in kettle with remaining ingredients except sour cream. Cover with water, cover and simmer for 2 1/2 hours over low heat. Strain through a sieve. Serve topped with sour cream.

3 Medium Egg White
1/3 Cup Powdered Sugar
1/2 Teaspoon Vanilla
3 Medium Egg Yolks beaten
1/2 Cup Flour
1/8 Teaspoon Salt
1/3 Cup Powdered Sugar
Beat egg whites stiff. Slowly add 1/3 cup powdered sugar. Fold in vanilla and egg yolks. Sift together the flour, salt and 1/3 cup powdered sugar. Carefully fold in the beaten egg mixture. Press into finger length shapes. Dust with powdered sugar. Bake in 350 degree oven for 10 minutes.

Eating Patterns The pattern of meal times has changed from the five meals a day of pre-industrialized society to the three that are common now. Most people have their midday meal away from home in the form of a packed lunch or a canteen meal. Hot food is eaten in the evening, and most people only have a single course on weekdays. First courses consisting of gruel, fruit soup or porridge are nowadays only eaten by older people. The individualization of meals, such as is known in the USA, has only caught on in Denmark with respect to breakfast; at the evening meal families make an effort to arrange for a family meal prepared at home. Ready-to-eat dishes are mainly used by single people. Culture As a result of the historical traditions, culture has a high priority in the Danish budget, among the highest in the world. The openness and flexibility of Danish cultural life are also due to the fact that public authorities as far as possible avoid interfering in the world of art and culture. There is probably no other country in the world in which the state supports the creative community and cultural institutions so generously, without demanding either accountability or something in return. The direct grant aid means that Danish artists are able to devote themselves to their art. In the same way, the cultural institutions - museums, theatres, film institute etc. - enjoy extensive autonomy without state interference in the day-to-day administration. Legislation in these areas concerns only the external framework and overall objectives and contains very few restrictions with regard to detail.

Danes eat very little beef and a lot of chicken, pork, and fish. In a country surrounded by water, fish is a primary element to their diet. From raw herring drenched in garlic and onion sauce to baked cod, fish is very popular. Boiled potatoes are a mainstay, also. The foods are bland in taste but not unappetizing.
One thing they do well is bake. There is nothing on this planet that can beat the taste of an authentic Danish pastry. Although bakers in the United States make decent imitations, they are nothing like the real thing. Denmark exports butter cookies to the United States. You may have tasted one of these. They are usually sold in blue tins labeled "Danish Butter Cookies."
