The seven-day Kwanzaa celebration culminates on December 31 with the karamu, a communal feast. Some celebrants suggest serving a Southern meal because that emphasizes "remembrance." Others suggest a meal from a different country in the African diaspora on each of Kwanzaa's seven nights to acknowledge "unity." With a few easy adaptations, we've come up with robust, full-flavored dishes for this karamu menu. Kwanzaa is an invented holiday, created in 1966 by African- American Maulana Karenga, who, Copage (a New York Times Magazine editor) here says, ``synthesized elements from many African harvest festivals.'' Observed throughout the week after Christmas by an increasing number of black Americans, it is loaded with symbolic rituals and capped by a feast on December 31 or January 1. As Copage describes it, the holiday is approached in a spirit of ``jazzy'' improvisation: Some celebrate Kwanzaa instead of Christmas, some after, and some ``Kwanzafy'' their Christmas celebrations. Celebrating Seasons Index A Kwanzaa Feast to Remember Page 1 (of 1) Kwanzaa is a weeklong celebration, culminating in a joyous night of singing, storytelling and feasting that celebrates togetherness, community and family. The feast on this last night of Kwanzaa is called the Karamu. For the Karamu, it is traditional to serve dishes that incorporate ingredients native to Africa, and particularly ingredients that were introduced to America by Africans. We've put together some delicious African-American inspired menus to help make any Karamu joyous and memorable: Zesty beef kabobs , smooth, smoky eggplant salad, and rich, creamy pumpkin soup start off this feast. Kwanzaa
To experience the evolution of a cultural holiday is a rare event not often seen in most lifetimes. Like sensing the shifting but steady change of light in a total eclipse of the sun, we are coming into the brighter light of Kwanzaa. This African-American holiday was first created just thirty years ago and over time has spread to become a welcome tradition among those of African heritage. Despite its awareness among the literati and the scholars, Kwanzaa is still not widely observed across all audiences. Many African-Americans have heard the name but know little of the traditions and cultural aspects of Kwanzaa. Yet, Kwanzaa has really gone mainstream, in the sense that it has attracted a good deal of media attention. There are no less than three books on Kwanzaa and their recipes have been released from major publishers. Kwanzaa is the African American cultural celebration that occurs between Christmas and New Years Day. While it is not founded on religion, it does bear a strong spiritual base in the sense that it emphasizes thought and meditation on seven key principles. And with all holidays, food and cooking become a focal point on which the customs and rituals revolve.

Here are some menu suggestions and recipes for "karumu," (on December 31 Although there is no specific dish or specialty for Kwanzaa, African-inspired preparations and local black American favorites are usually included in the feast. So I used some of the African, Caribbean and Southern traditional (or favorite) foods to assemble a delectable Kwanzaa Feast I added some Indian recipes , some of my versions of recipes found here there and everywhere and then I picked some really nice ones from the net. The result is this flavorful feast.

Founded in 1966 by graduate student Maulana Karenga in response to rioting during the Civil Rights Movement, Kwanzaa is an African-American celebration of cultural reaffirmation. The non-denominational holiday encompasses spiritual and festive rejoicing of the goodness of life and nature. Participants commemorate the past and look to the future. Kwanzaa derives its name from the Swahili phrase meaning "first fruits of the harvest". The holiday lasts for seven days, from December 26th to January 1st , and is guided by seven principles known as Nguzo Saba . The Kwanzaa Karumu , a traditional communal feast, is held on the final day of the holiday. Cultural ceremonies and entertainment accompany the feast, which is decoratively presented family-style.
