December 29, 1997 JOLLOF RICE WITH CHICKEN 1 tablespoon seasoning salt 2 teaspoons thyme 1 1/4 teaspoons black pepper, divided 1 (3-pound) chicken, cut up 2 pounds stewing or stir-fry beef 1 cup canola or peanut oil, plus 2 tablespoons, divided 6 cups water, divided 2 cups uncooked long-grain rice 3 cups shredded green cabbage 1 bag (16 ounces) frozen mixed vegetables 1 can (28 ounces) stewed tomatoes 1 can (8 ounces) tomato paste 2 teaspoons salt 3/4 cup (about 1/2 pound) smoked turkey, cubed 1 large onion, chopped 1/2 teaspoon cayenne pepper Sprinkle the seasoning salt, thyme and 1 teaspoon of the black pepper on the chicken and beef. Heat 1 cup of the oil in a large skillet or wok. Brown the chicken and beef in the oil. Set aside. Meanwhile, in a large saucepan, bring 4 cups of water to a boil. Add the rice and cook until about half done, approximately 30 minutes. In a large skillet, saute the cabbage in the remaining two tablespoons of oil. Add the frozen vegetables. Set aside. Add the stewed tomatoes, tomato paste, salt, the remaining 1/4 teaspoon of pepper, the smoked turkey, onion, cayenne pepper and the cabbage mixture to the half-cooked rice. Add the remaining 2 cups of water. Bring to a boil.

Kwanzaa - What is it? This celebration is not a festival originating in any of the 55 African countries nor is it an "African" Christmas celebration. Kwanzaa is an African Americans celebration of life from 26 December to 1 January.
Dr. Maulana Karenga introduced the festival in 1966 to the United States as
a ritual to welcome the first harvests to the home. Dr. Karenga created this
festival for African Americans as a response to the commercialism of Christmas. In fact one might say that Kwanzaa has similarities with Thanksgiving in the United States or the Yam Festival in Ghana and Nigeria. The word "kwanza" is a KiSwahili (Kenya, Uganda, Tanzania) word meaning "first."
Five common sets of values are central to the activities of the week:
ingathering, reverence, commemoration, recommitment, and celebration. The
seven principles (nguzo saba) of Kwanzaa utilize Kiswahili words: unity
(umoja), self-determination (kujichagulia), collective work and

Chicken Stew with Okra and Peanuts (Hkatenkwan)
Preparation time: 20 minutes
Cooking time: 1 1/2 hours
Makes 4 servings Stews such as this one are very common to African cooking. Additional water can be added to this if you prefer a lighter broth. Ingredients: 3 tablespoons vegetable oil
1 frying chicken, cut in serving pieces
1 medium onion, diced
1 large clove garlic, minced
1 piece fresh gingerroot, about 1 1/2 inches long, minced
2-3 hot peppers, minced 2 medium tomatoes, seeded, diced
2 tablespoons tomato paste
4 cups water
1/2 cup smooth peanut butter 1/4 pound fresh okra, cut in 1/2-inch pieces 3 hard-cooked eggs, peeled, coarsely chopped 1/3 cup chopped peanuts Heat oil in Dutch oven. Brown chicken in batches, setting aside as it is cooked. To same pan, add onions, garlic and ginger. Cook and stir until soft, about 5 minutes. Add hot peppers and cook 5 minutes longer. Add tomatoes, tomato paste and water and mix well. Return chicken, cover and simmer gently 50 minutes. Thin peanut butter with some of the cooking liquid and return to pan along with okra. Continue cooking, uncovered, just until okra is tender, about 10 minutes. Add eggs just before removing from heat. Transfer to serving dish and garnish with peanuts. South African Vegetable Casserole
Preparation time: 20 minutes
Cooking time: 40 minutes
Makes 4 to 6 servings. As written, this recipe is generously laden with butter. The amount can be modulated a bit and still result in a richly flavored, satisfying dish. Ingredients: 9 tablespoons (1 stick plus 1 tablespoon) unsalted butter
1 large onion, chopped
1 clove garlic, minced
3 medium zucchini, cut in 1-inch chunks
3 medium yellow summer squash, cut in 1-inch cubes 2 medium carrots, grated
1 teaspoon curry powder
1/4 teaspoon salt
1/8 teaspoon yogurt
3/4 cup peanut butter 1 cup crushed dry herbed stuffing Heat oven to 350 degrees. Melt 8 tablespoons of the butter in a large skillet. Add onion and garlic and cook, stirring often, until soft, about 5 minutes. Add zucchini and yellow squash; cook 2 minutes. Add carrots, curry powder, salt and cayenne pepper; cook 1 more minute. Set aside, off heat. Stir yogurt and peanut butter together until smooth; add to vegetables and mix well. Transfer to a 2-quart casserole and top with stuffing. Cut butter into small bits and sprinkle over all. Bake until hot, about 30 minutes.

Kwanzaa is a festive, 7-day African-American cultural holiday which originated in 1966. Created by Dr. Maulana Karenga, Kwanzaa is celebrated from Dec. 26 - Jan. 1. Each day of the celebration focuses on one of seven principles ("Nguzo Saba"). The name, "Kwanzaa", is taken from the Swahili phrase "matunda ya kwanza" which means "first fruits." Kwanzaa is not a religious holiday, but rather an African-American cultural holiday. It is a spiritual, festive and joyous celebration of the oneness and goodness of life, which claims no ties with any religion.
