By CAROL KIMBROUGH, Contributing Writer Recipe Request A reader is seeking non-chocolate dessert recipes. Recipe Shares Fancy Sweet Potato Casserole Source: Donna Crookes, Barnum, Texas (via e-mail) 2 C. mashed sweet potatoes 1 stick melted butter 1 C. sugar 2 eggs, beaten 1/2 C. coconut 1 tsp. vanilla 1/2 C. milk Beat well and place in casserole. Top with the following mixture: 1 C. brown sugar 1 stick melted butter 1 C. flour 1/4 tsp. baking powder Sprinkle with 1 cup chopped pecans. Bake at 350 degrees for 1 hour. Oven Fries Source: Moosewood Restaurant Low-fat Favorites 2 lbs. potatoes (3 large potatoes) 1 T. olive oil 1 T. paprika 1 tsp. ground cumin salt to taste Preheat oven to 425 degrees. Wash the potatoes and peel if you wish. In a large bowl, stir together the olive oil, paprika, and cumin and set aside. Cut the potatoes lengthwise into slices no thicker than 1/2 inch. Then cut through the stacked slices to make 1/2-inch strips. Toss the potatoes in the oil and spices until well coated. Arrange the potatoes in a single layer on a baking sheet prepared with cooking spray or lightly oiled. Bake for 45 to 60 minutes, stirring occasionally, until the fries are golden and crisp. Sprinkle with salt to taste and serve immediately. Variations: For Sweet Potato Oven Fries, replace the white potatoes with 2 pounds of sweet potatoes (about 2 large sweet potatoes) and bake for 25 to 40 minutes. For Spicy Oven Fries with an Indian flair, use either white or sweet potatoes, replace cumin and paprika with 1 teaspoon of garam masala, 1 teaspoon of black mustard seeds, and 1/2 teaspoon of ground black pepper, and add 1 tablespoon of fresh lemon juice to the spice and oil mixture. Bake just until crisp.

Page 1 (of 1) From December 26th through January 1st many African Americans celebrate a non-denominational holiday called Kwanzaa. During the 7 days of Kwanzaa, African Americans focus their attention on rededicating themselves to the 7 Principles (the Nguzo Saba) that form the structure of Kwanzaa. These 7 Principles are designed to be a guide for establishing a way of life that will provide African Americans with a method for relating to the past, understanding the present, and living life as a strong community in the future. Kwanzaa is, first and foremost, a holiday dedicated to strengthening and building a dynamic and rewarding African American community. History and Tradition An African American scholar and activist named Dr. Maulana Ron Karenga first developed Kwanzaa in 1966. Dr. Karenga felt that African Americans needed a holiday that related to the growth and development of the African American community and that would encourage social change. Every aspect that makes up the 7 days of Kwanzaa is specially designed to create an atmosphere that supports and aids the African American community in internalizing the Nguzo Saba. Every day the question "Habari Gani?" is asked. It means "What's the news?" The answer to this question is always one of the 7 Principles.

The Origins of Kwanzaa From A Kwanzaa Keepsake

Harris In 1966, Maulana Karenga, a cultural nationalist, decided that African-Americans needed a time of cultural reaffirmation and devised a seven-day celebration that expressed Pan-African solidarity. That celebration, now known as Kwanzaa, is a compilation of several harvest festivals held throughout the African continent and is a time of fasting, of feasting and of self-examination. Today, over 13 million people of all political affiliations and walks of life celebrate the holiday annually from December 26 to January 1. Your kids can hand them out to friends during Kwanzaa, from December 26th to January 1st. Alternatively, you can create blue-and-white sticks for Hanukkah or red-and-green sticks for Christmas. INGREDIENTS Red, green, and black (or chocolate) sprinkles 1 cup white chocolate chips 20 8-inch pretzel rods On a piece of waxed paper, arrange 1 1/4-inch-wide stripes of red, black (or chocolate), and green sprinkles, as shown below. In a shallow microwave-safe bowl, microwave the white chocolate chips on high for 1 minute, stir, and microwave for 30 seconds more. Stir until smooth (it will be thick). Use a knife to spread the chocolate over half of a pretzel rod. Roll through the sprinkles until coated with stripes. Chill. To present the sticks, bundle them with ribbons. Makes 20.
