• Extension Poultry Specialists address a number of educational issues affecting both the poultry industry and the citizens of Arkansas. The information presented on this web site is intended to augment those efforts. Conference and educational displays which address both the information and educational needs of industry personnel, growers and allied industry personnel are regularly planned and implemented. • Without knowledge of the structure (anatomy) and function (physiology) of the bird it is very difficult to understand how conditions affect these animals. The information present here should assist those who want a deeper understanding of commercial poultry species. • Diseases are a constant threat to poultry. While it is important to seek the assistance of a veterinarian in serious disease outbreaks, early recognition of diseases can prevent spread. The information presented here will assist in the recognition of common poultry diseases so that diseases can be contained. • Many common questions exist with respect to poultry and poultry production. Although it is not possible or practical to address every poultry question that could be posed with respect to poultry, some of the more common questions and their answers are listed here.

Grains Oilseeds Pigs Cattle ... Subregional MAP Westman Poultry BROILER CHICKENS In 1998, Manitoba had 129 registered broiler chicken producers with about 6.6 million birds on farms. Approximately 13% of broiler farms are located in the Westman Region. The province also has eight commercial chicken hatcheries, with one, Clark Hy-Line located in Brandon. There are two poultry slaughtering plants in Manitoba- Granny's Poultry Co-operative (Man) Ltd . and Dunn-Rite Food Products Ltd, and one secondary processor, Prairie Produce Inc. Manitoba processed 31.6 million kgs of chicken meat for a total value of $90 million and exported 0.95 million kg of chicken valued at $0.71 million in 1998. There is room for growth in Manitoba's broiler chicken industry for the domestic market owing to supply management under the National Allocation and Pricing Agreement. Each province is allowed to increase its chicken production by a maximum of 8% over the base in each period. There is also potential for further growth for export markets. The GATT agreement replaced border controls for imported chicken with a tariff of 280.4 percent in 1995 ($1.96/kg), which has been reduced by 15% between 1995-1999. Prairie poultry producers generally have a competitive advantage over many other areas in Canada. EGGS In 1998, Manitoba had 194 registered egg producers and about 300 unregistered producers (permitted to have 100-499 layers) with 2.1 million layers. Approximately 10% of Manitoba's egg production operations are located in the Westman Region, with 20 registered egg and pullet producers who collectively have a laying hen quota of 155,293 and a pullet quota of 174,011.

In addition to the almost 5,000 commercial poultry and egg producers in Canada. While this might seem like a small number of producers,a single person is able to look after 50,000 broiler hens producing 640 tonnes of meat per year! The poultry industry relies on many other businesses: 109 hatcheries, 119 feed manufacturers, 82 feed supplement
suppliers and 44 drug suppliers.The Industry is so efficient in Canada that 25,000 broilers per hour are marketed! As in cattle's division between dairy and beef production, poultry is also divided into two distinct, efficient, and productive industries; meat production and egg production . Broiler and roaster producers grow birds for meat. Egg producers produce eggs for retail sale (market egg producers) or for sale to hatcheries that sell day-old chicks to market egg or broiler producers (hatcher egg producers). The structure of the turkey industry is very much the same as the broiler industry, yet much smaller in scale. Eggs, like milk production, is regulated. Each farmer has a quota which forces him to control the number of laying birds and the quantity of eggs that can be marketed. As North American grain production evolved into a large scale, intensive industry, poultry production changed from a backyard, low intensity farming practice to a large scale intensive industry based on the now-available concentrate feeds. Most Saskatchewan producers use this intensive approach, raising all types of poultry in large, automated, controlled environment barns that can optimize growth rates, meat quality, and therefore maximize the economics of poultry production. On a medium size poultry farm each flock has about 7,700 hens wheras a large producer averages 49,100 hens per flock. Most poultry production occurs in Ontario and Quebec.

Today, poultry products including chicken, turkeys and eggs are marketed through provincial marketing agencies which are regulated by national agencies. It is the responsibility of these national agencies to dictate the quantity of product to be produced by each province based on it's population.
In addition to regulating the quantity of meat produced in Canada, there are also a program for the inspection and grading of eggs. Grading stations are responsible for the storage, washing, drying, candling, grading, packing, storage and delivery of eggs. During this time eggs are kept in cool and humid coolers to maintain their quality. Eggs are washed to remove manure or shell contaminates. A sanitizing detergent may be added to the water to reduce bacterial numbers. After washing, eggs must be dried to prevent bacterial populations from multiplying on the shell surface. After drying, eggs may be sprayed with a light coat of oil to seal their shell and prevent moisture loss. Eggs will be graded based on their weight, shell quality and interior quality. All eggs must meet standards set and enforced by Agriculture Canada. The internal characteristics of the egg will also be graded, considering albumin (egg white) and yolk quality, and presence of blood and meat spots. After inspection, eggs will be given one of four grades (A1, A,B,C). Grades A and A1 meet the requirements for table eggs, while B and C grade eggs are suitable for processed egg products. Eggs which do not meet strict requirements are removed.

British Columbia 4-H Program Fast Facts: 330 farms reported the following 39,106 cattle and calves consisting of 947 bulls (1yr and older) 15,021 beef cows 1,272 dairy cows 4,304 heifers (1yr and older) 3,642 steers (1yr and older) and 13,920 calves Cattle: The cattle industry includes the commercial herds as well as the registered purebred breeders. Every year since 1975 Vanderhoof has held a registered purebred bull sale featuring pure bred stock from the central interior as well as drawing bulls from Alberta and throughout BC. 1999 marks the 24th annual bull sale to be held in Vanderhoof. The sale has featured top breeders and encouraged herd improvement. Select heifer replacements are now a yearly part of the special sale. Bulls and heifers from the Nechako find their way to ranches all over the Northwest. Some have been shipped to the United States and Asian buyers. The following chart illustrates the distribution of the various cattle types that make up the cattle industry in the Nechako Valley.

SKINNY SHAKE OVEN CHICKEN 4 cups dry bread crumbs (I use soda cracker crumbs) 1/2 cup vegetable oil 1 tablespoon salt 1 tablespoon paprika 1 tablespoon celery salt 1 teaspoon pepper Optional seasonings: Seasoning salt, onion or garlic salt, lemon pepper Mix until evenly distributed. Put 1/2 cup of mix in a bag. Add moist chicken; shake. Arrange slices skin side up in foil-lined pan or non-stick pan. Use no oil. Bake uncovered at 375 degrees for 45 minutes. Bordens (Italian-style) crumbs In small fry pan, melt margarine over low heat. Remove from heat; stir in salt and pepper. Place bread crumbs in shallow dish. Dip chicken in margarine, one piece at a time, turning to coat; then roll in crumbs till thoroughly coated. Lightly grease a baking sheet. Place chicken in a single layer. The curriculum offered by this department prepares you to meet the challenges of producing, processing, and marketing poultry and allied products in today's global agricultural market.
COURSE WORK
If you select the poultry emphasis of the animal, dairy, and poultry sciences curriculum, you will have an emphasis on the application of basic and applied animal science principles to the production of poultry and related products. In addition to scientific training in genetics, nutrition, and physiology, you will complete courses in poultry production, incubation and hatchery management, poultry biology, and poultry evaluation.
CAREER OPPORTUNITIES
The outlook for careers in poultry science is excellent. Poultry is the largest animal agriculture industry in the state, based on commodity value. Nationwide, poultry is the number one consumer meat commodity. Markets for eggs, broilers, turkeys, ostriches, and game birds are expanding, and the need for highly qualified professionals is growing. In addition, new advances in laboratory and processing techniques make studies in poultry science exciting and challenging.
