* Exported from MasterCook * Apple and Butternut Squash Soup Recipe By : Serving Size : 10 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient Preparation Method 3 tablespoons Unsalted butter 2 large Onions chopped 2 tablespoons Curry powder 1 teaspoon Chili powder 5 cups Chicken stock homemade or low-sodium canned 1 large Butternut squash (about 8 cups), peeled, seeded and chopped 3 Firm, tart apples such as Granny Smith peeled, cored, diced Salt Fresh ground black pepper 1/2 cup Whipping cream 1 tablespoon Fresh parsley or cilantro; chopped In heavy skillet, melt butter over medium heat. Add onions and saute until translucent, about 5 minutes. Add curry and chili powders and cook for another 5 minutes. Add half the stock and bring to a boil. Transfer mixture to a soup kettle, add squash and apples; season with salt and pepper. Bring to a boil, reduce heat and simmer 45 minutes to 1 hour, or until squash is tender. Stir occasionally to prevent sticking. Strain the soup and reserve liquid. Place the pulp in the bowl of a food processor and pulse until pureed. Return the puree, reserved liquid, cream and the remaining chicken stock to a clean soup kettle and bring to a simmer. Ladle the soup into warm bowls; sprinkle with chopped parsley or cilantro. Note: This soup can be made ahead, or frozen without the cream. Nutrition note: Excellent source of beta carotene from the yellow butternut squash. History and Taxonomy
Squash and pumpkins will be discussed together because their cultural requirements are similar and because of the great confusion in differentiating between the two. There is also confusion about the origin of pumpkins and squash. T.W. Whitaker and G.W. Bohn presented evidence in 1950 that five species of Cucurbita, that are known as pumpkins and squash, originated in the Americas. Whitaker and Bohn also defined the terms pumpkin, summer squash, and winter squash as follows: Pumpkin -the edible fruit of any species of Cucurbita, used when ripe as a table vegetable or in pies; flesh is somewhat coarse and/or strongly flavored, hence is not generally served as a baked vegetable. Summer Squash -The edible fruit of any species of Cucurbita, commonly C. pepo , used when immature as a table vegetable. Winter Squash -The edible fruit of any species of Cucurbita used when ripe as a table vegetable or in pies; flesh is usually fine-grained and of mild flavor, hence is suitable for baking.

tsp. curry powder sunburst squash cup chopped yellow onion can vegetable broth cups low-fat buttermilk Tbs. chopped fresh mint tsp. salt
Cook curry powder in a large saucepan over medium heat 1 min. or until toasted. Add squash, onion, and broth. Bring to a boil; cover, reduce heat and simmer 25 min. or until tender. Place squash mixture in a blender; process until smooth. Pour mixture into a bowl; cover and chill. Stir in buttermilk, mint, and salt.

Risotto with Squash (pressure cooker)
  • 1 tb Olive oil
  • 1 c Onions finely chopped or 1 c Shallot finely chopped
  • 1 t Dried sage leaves
  • 1 1/2 c Arborio rice
  • 3 1/2 c To 4 c. vegetable stock
  • 1 lb Butternut squash peeled -seeded, cut into 1" chunks -(about 3 c)
  • 1 t Salt or to taste
  • 1/4 c Parmesan cheese freshly -grated
  • Pepper to taste
  • 2 tb Fresh parsley minced
Heat oil in the cooker. Cook the shallots over medium-high heat, stirring frequently, for 1 minute. Add the sage and rice, stirring to coat the rice. Stir in 3-1/2 cups of the stock (stand back to avoid sputtering oil) and bring to a boil. Add squash and salt. Lock lid in place. Over high heat, bring to high pressure. Lower heat, bring to high pressure. Lower heat just to maintain high pressure, and cook for 5 minutes. Reduce pressure with the quick-release method. (The quick-release method is to run water over the pressure cooker at the faucet). Remove the lid, tilting it away from you to allow any excess steam to escape. If risotto isn't creamy, stir in bit more stock. Cook over medium heat, stirring constantly, until the rice achieves the desired consistency (it should be tender but chewy) and squash is partially pureed. Stir in Parmesan, pepper and parsley. Serve in soup bowls.

Ingredients:
  • 1/4 cup margarine
  • 1 medium white onion
  • 3 or 4 cups cooked pumpkin or other squash
  • 1/2 teaspoon salt (optional)
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried crushed red pepper (optional)
  • 1 1/2 cups soup stock
Method:
Chop the onion coarsely. Melt the margarine in a large saucepan. Stir the onion into the melted margarine, add the salt, pepper, and red pepper (optional), and cook until the onion is very brown but not burned, about 30 minutes, on low to medium heat. Stir frequently and keep covered. Add the cooked squash and stir in the vegetable stock. Bring to a boil, reduce heat, and simmer for at least 45 minutes, covered, on low to medium heat. If the soup seems too watery, simmer uncovered until it reduces. Serve hot, topped with cilantro or parsley (optional).
